Bananas Foster Bread and Muffins

This is the best banana bread recipe. With a little pat of butter, these bananas foster bread slices and  muffins are addictive. I use very ripe, brown bananas (of frozen bananas), light rum, brown sugar to make a caramelized banana foster flavor, and gives additional depth to the bread.

  • 1 1/2  cups  mashed ripe banana
  • 1  cup  packed brown sugar, divided
  • 5  tablespoons  butter, melted and divided
  • 1/8  cup  light rum, divided
  • 1/3  cup  plain fat-free yogurt
  • 2  large eggs
  • 1 3/4 cup  all-purpose flour
  • 3/4  teaspoon  baking soda
  • 1/2  teaspoon  salt
  • 3/4  teaspoon  ground cinnamon
  • Cooking spray

Preheat oven to 350°. Combine banana, 1/2 cup brown sugar, 5 tablespoons butter, and 3 tablespoons rum in a nonstick skillet. Cook over medium heat until mixture begins to bubble. Remove from heat; cool. Place banana mixture in a large bowl. Add yogurt, remaining 1/2 cup brown sugar, and eggs. Beat with a mixer at medium speed. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients  in a small bowl. Add flour mixture to banana mixture; beat just until blended. Pour batter into a loaf pan coated with cooking spray or muffin tins. Bake at 350° for 1 hour (for a large loaf), 30-40 minutes for muffins. Remove from oven; cool 10 minutes in pan on a wire rack. Remove bread from pan; place on wire rack.

Brownie Cookies


We always receive raves with this hybrid chewy brownie cookies. The brownie cookies have a nice chew, fudgey flavor and we particularly like how the flour creates crackled tops. Another way to enjoy a brownie and extra bonus is dunking it with favorite cup of tea or milk!

Adapted from Epicurious

  • 1 pkg. family size brownie mix
  • 3/4 c. flour
  • 6 Tbsp. cooking oil
  • 2 eggs
  • 2 Tbsp. water

Preheat oven to 350 degrees. Beat the eggs, oil and water. To the brownie mix, add the additional flour and combine all ingredients. Mix well. Using a cookie scoop, drop cookies onto an ungreased cookie sheet. Bake 11 minutes. Store in airtight container.

Memories and Food: Booneville County Fair

I really enjoyed myself at the county fair in upstate New York. There was a petting zoo with piglets, cows, goats, 4-H competitions. Besides the carnival rides, the carnie food included fried dough, homemade root beer floats from a cute couple, cotton candy, burgers, onions and even turkey legs.

House of Siam, South End, Boston

House of Siam has two locations Columbus and Tremont and they serve generous portions of their Thai noodles. Although I am only reviewing the noodles, the tom yum and wonton soup are fragrant and warmth is satisfying during winter.

Pad Thai $10.95, the most famous Thai noodle dish, rice noodles pan fried with eggs, chicken, shrimp, scallions, beans prouts & ground peanuts.

The pad thai (pan-fried rice noodles with eggs, chicken, shrimp, scallions, beans sprouts & ground peanuts) is lightly sweetened and the peanuts give a great crunch.

Pad See Yew $11.95, Stir fried ho fun noodles with broccoli, egg in a yellow bean sauce.

The Pad See Ew, stir fried ho fun noodles with broccoli, egg in a yellow bean sauce is by far the best dish of the house. It really tastes great the next day heated or cold.

Gourmet Dumpling and Coffee House To Go, Chinatown, Boston

Gourmet Dumpling House has become the go to Chinese restaurant ever since its hit the Ritz Carlton suggested list. I found out about this little gem from my Cali raised friend.

The restaurant usually has 10 people waiting outside and I bet the pictures of Blake Lively and other photos of celebrities with the restaurants help popularize the place. To enjoy the food, without the hassle, take out has been a great option. I have never had any dish I didn’t like from here.

My favorite of this series is the spicy salt and pepper flounder. The flounder is lightly battered, has the perfect amount of seasoning and crisp. I have had spicy salt squid which is also delish.

This egg pastry  is not from GDH, but from the Maxim Coffee House across the street, the custard is sweet, has a bounce and a flakey crust.

Usually there are older Chinese men who patron the coffee place, have a coffee and people watch.
