My first taste of Chori Pan was encountered in Quito, Ecuador, visiting an old college friend. She grilled plump chorizo sausage, placing them in a sliced baguette. The spicy sausage and toasted bread has a nice bite and serving them with melted swiss cheese or chimmichuri sauce gives an added layer of flavor.
- 4 Chorizo sausages
- 1 French Baquette
- Swiss Cheese slices
Preferably use a grill or charcoal barbeque, however if you just use a toaster oven on broil. Poke holes in the chorizo and toast/grill. Grill for 8 to 10 minutes per side. Slice the French roll on one side to open up. Place in toaster. Place a chorizo inside of the roll and a slice of swiss cheese and place back into the oven to melt the cheese for 2 minutes.
