I was looking for a clever way to use silken tofu and decided to make a high protein, almond flavored chocolate mousse. This mousse is deeply decadent from the dark chocolate and almond bits. You really can not notice the tofu flavor which absorbs all the coconut milk and chocolate flavor. It is luscious and a great way to have chocolate.

- 1/2 cup organic soy or coconut milk
- 8 ounce dark or semi sweet chocolate (I used dark with almonds)
- 12 ounces one package of silken tofu
- 1/2 c cocoa powder
- 1/3 cup pure maple syrup or agave or 6 T sugar or Stevia
In a blender, puree milk and tofu until smooth. Put the cocoa powder, chopped chocolate, sugar or agave until smooth. Spoon the mousse into serving dishes, cover and refrigerate for at least 1 hour.
