Smoked Salmon and Cream Cheese Omelette

A little smoked salmon, cream cheese and chive in an omelette adds a little variety and just plain delicious. Thank you Tyler Florence.

Ingredients

  • 2 eggs
  • 1/16 cup heavy cream
  • 1/2 tablespoon unsalted butter
  • 1/8 pound smoked salmon, torn into large piece
  • 1/4 cup cream cheese, room temperature
  • 1 T chives
  • Kosher salt and freshly ground black pepper

Whisk eggs and heavy cream together in a large mixing bowl.

Take a large nonstick pan and set over medium heat. When the pan is heated add the butter and spread out evenly over the surface of the pan. Once it starts to foam turn the heat down and add eggs. Using a spatula swirl the eggs quickly in a circular motion as you gently shake the pan back and forth to cook evenly, you don’t want any color.

Once the eggs begin to set, drop the pieces of salmon, small spoonfuls of cream cheese, and green onions over the top. Season with salt and pepper, then as you slide it out onto your cutting board, roll 1 side over the top as you go to form an omelette.

Denny’s, Salem, New Hampshire

After A+K’s wedding, we made a trip to Denny’s. A first! For sometime now we would hear about the Moons Over My Hammy (Ham and scrambled egg sandwich with Swiss and  American cheeses on grilled sourdough) or Lumberjack Slams (Two buttermilk pancakes, a slice of grilled ham, two bacon strips, two sausage links and two eggs, plus hash browns or grits and choice of bread) shakes and value of Denny’s.

The $2, $4, $6, $8 Values are crazy good.  For example, for $2 items, there are a stack of pancakes or Cheese fries. We shared the $4 Everyday Value Slam. There is also a $6 Classic burger and fries.

We added fresh blueberries to our two buttermilk pancakes. The pancakes itself were super fluffy and soft. They were super generous in size and lovely with the pops of warmed blueberries.

We tried the pancake puppies, bite-sized round pancakes rolled in a delicious blend of cinnamon and sugar. Served with a side  of warm syrup.

The Grand Slamwich was a monster one with two scrambled eggs, sausage, crispy bacon,  shaved ham, mayonnaise and American cheese  on potato bread grilled with a maple spice  spread. Served with crispy hash browns.

Will be back to Denny’s again for breakfast anytime. Our server was a doll and was really taking care of us and so sweet. The bottomless cups of coffee, comfort food and diner atmosphere is casual, relaxing and fun late night.

A+K’s Wedding, Wonalancet, New Hampshire

It was only a year ago when an email was sent and entitled Squash patch, a conk mushroom, and a ring…A was engaged to K and we couldn’t have been more thrilled. In fact, we visited Pepper Sky’s  (BMH’s review of Pepper Sky’s) with the bride and she explained this was the location of their first date.

We were looking forward to visiting Wonlancet, New Hampshire, the location of the nuptuals and location of the proposal. The gorgeous couple’s ceremony was one of the most awe- inspiring and cultural.  From the advice from loved ones to recitations of poems and Sonnet 116 from Shakespeare.

The San San Kudo Japanese Wedding Cremony (Three Times Three Equals Nine) was lovely and it was fun to watch the groom get tipsy on sips of sake.  A looked stunning in the Engiyamata Maasai Wedding Ceremony in which there was a shuka (blanket)  unveiling and A had colorful strands of beads around her neck and down her dress.

While mingling, we enjoyed some prosecco and sparkling water. Who doesn’t love bubbles?

Loved  the pastel origami cranes.

The canoe full of seasonal and local beers as an absolute hit. Such a creative touch.We devoured these bacon wrapped  dates (some stuffed with bleu). The salty and creamy sweet flavors kept saying eat me.

We had many of the goat cheese, olive and filo mini tarts full of creamy, tangy flavor and crunch.

The table had lovely local wildflowers, boxes from Kenya filled with tea and little bottles of hot sauce given the bride and groom’s mutual love of heat and spicy foods.

We enjoyed Lesse Fitch Sauvignon Blanc throughout the evening and we were served family style with Mesculin Salad with Radicchio, Endive and Native Blueberries with Vinaigrette Dressing, Tabouleh with Tomatoes and fresh mint, assorted Wonalancet Breads with olive oil. The Marinated grilled “Huxley” Flank and assorted grilled summer vegetables with lemon and thyme was so good and wish I had more.

We loved the menu itself inscribed a quote from Julia Child. “Dining with one’s friends and beloved family is certainly one of life’s primal and most innocent delights, one that is both soul-satisfying and eternal.”

The first dance begins with Jason Mraz and Colbie Caillait’s angelic duo of Lucky.

And then, the chaos ensues. Is Ellen here?! 

No it’s A+K showing off their unbelievable dance moves  and clever humor with a breakout Lady GaGa Just Dance.

The wedding cake was pound cake and berries and cream served with Kenyan Coffee and Tea. (Don’t you love the furry friend eyeing the cake too!)

Our welcome bag had a tiny bottle of Tabasco, luscious European chocolates, AK M&Ms, bug spray, Japanese rice crackers, bandages. The perfect combo. Congrats!
