I am one lucky girl. Feeling lazy I asked for some eggs with a little herbs de provence, any style, thinking I would get something like this.
Better yet, I got this! So fun, whimsical and the dinos were prancing around their eggs. Awesome. Dinosaur Awesome. The baked eggs were nicely herbal, cheesy and tasty with the crip dino flour tortillas. Must have again.

- 2 Pete and Gerry’s eggs
- sprinkle of Herbs de Provence
- handful of shredded cheddar cheese
- salt and pepper to taste
- one flour quesadilla
- dinosaur cookie cutter (from Sur La Table)
- toaster oven muffin pan (from Crate and Barrel)
- cooking spray
Preheat oven to 400°F. Lightly oil or spray the muffin cups. Crack egg in muffin, sprinkle cheddar cheese and herbs de provence.
Using dino cookie cutter, cut out dinosaur shapes in flour tortilla. Toast or in a pan crisp up the dino tortilla shapes.
Bake eggs in middle of oven until whites are cooked but yolks are still runny, about 15 minutes. Season eggs with salt and pepper and top with additional shredded cheddar cheese.
Red Velvet and cream cheese is a dynamic duo and dream when you add dinosaur decorations. Barefoot Contessa and Duncan Hines both have Red Velvet cake mix, which is a time saver and prevents the red food coloring fiasco.

Cream Cheese Frosting
- 4 ounces unsalted butter, softened
- 4 ounces cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
In a large bowl, beat together the butter and cream cheese with mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract.
