When you crave whip cream, oreos, coconut, something light and fluffy, an icebox cake hits the spot. It is so easy to make, impressive and really enjoyable. This zebra striped cake reminds me of a white buche de noel.

- 3 c heavy cream
- 3 tablespoons sugar
- 1 tablespoon vanilla extract
- 2 (9-ounce) packages Nabisco chocolate wafer cookies
In a large bowl, beat cream, sugar and vanilla with an electric mixer on high speed until soft peaks form.
On serving plate, arrange cookies side by side into log form.
Sandwich the wafers with whipped cream, making a log. Repeat with remaining cookies and cream. Frost surface with remaining cream and if you want a log bark, use fork to simulate the bark. Cover with plastic wrap and refrigerate overnight.
To serve, you can optionally dust top lightly with cocoa powder or chocolate shavings.
