During the winter I have been experimenting with baking homemade potato chips, french fries, and recently tried butternut squash fries. They are sweet and not to mention good for you. I’m looking forward to making my own kale chips soon.

- 1/2 butternut squash
- kosher salt
- olive oil spray
Pre-heat oven to 425 degrees. Peel, cut in half and remove the seeds from the butternut squash. Slice the squash into thin french fry shapes with a knife or mandolin. Place on a cookie sheet sprayed with olive oil spray. Then spray squash fries with olive oil spray (we use the Misto). Cover lightly with kosher salt. Bake for 40 minutes and using a spatula, flip halfway through baking process. Depending on how crispy you like the fries, when they starting to brown on the edges and get crispy, they are ready to eat!
