Red Velvet Cupcakes and Cocoa Cream Cheese Frosting

Cocoa cream cheese frosting in the middle of the core of a red velvet cupcake, really enhances the chocolate cocoa flavor of the cake. I found this clever cupcake corer recently and it makes more room for the good stuff…frosting. I just follow the directions of a Red Velvet cake mix and whip up a quick homemade cocoa cream cheese frosting.

The Cuisipro Cupcake Corer was very easy to use and it was a nice treat to eat the scraps.

Adapted from

  • 1 (8 ounce) packages cream cheese, softened
  • 1/4 cup butter, softened
  • 1 cups sifted confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup cocoa
In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar and cocoa. Store in the refrigerator after use.
