The benefits of brown rice versus white rice are widely publicized, but for a long time growing up we would eat only white rice. Our parents would tell us for generations, brown rice was considered for poorer people and polished white rice was a signal of wealth.
Only recently I have been eating more brown rice and now prefer it with sushi and when eating Asian dishes at home. At most Chinatown eateries, I’ve noticed brown rice is still not served.
- 2 cups water
- 1 cup rice
Bring water to a boil, add the rice, and reduce to a simmer and cover. Cook for 40 minutes.
