Guacamole

I do not know many people who don not love creamy guacamole. At every party I have been to, there has been homemade guac that most guests devour. After observing many table side guacamole demonstrations, I decided it was time to attempt this myself.  I add paprika and garlic for a bit of a zing and double the lemons or limes because I love the extra tang. I think I err on extra citrus more than most because I love the flavor.

  • 2 Haas avocados, halved, seeded and peeled
  • 2 lemons or limes, juiced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cayenne or paprika
  • 1/2 medium onion (red or white), diced
  • 1 handfuls of cherry tomatoes, diced
  • 2 clove garlic, minced

In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Using a fork add the salt, paprika or cayenne and mash. Then, fold in the onions, tomatoes and garlic. Serve.
