Banana Pudding

After some stellar Banana Pudding at both Stubb’s and the Driskill Hotel’s 1884 Cafe, we knew we would be making our own rendition. Our version had more intensity of banana flavor because we mashed super ripe bananas into the vanilla pudding itself, in addition to the banana slices. I also enjoyed the texture of the Nilla wafer crumble and sweetened whip cream on top. Next time, I am making homemade Nilla wafers from scratch.

  • Cook and Serve vanilla pudding
  • milk
  • 3 ripe bananas (2 sliced bananas for the pudding and 1 sliced banana for garnish)
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 30 Nilla wafers (additional 5 Nilla wafers for crumbs)
Slice bananas into 1/3 inch slices. Lay five Nilla wafers in ramekins and a slice of banana at bottom of dish.
Prepare cook and serve vanilla pudding as listed on package. Add the 2 sliced bananas and mash into warm vanilla pudding. Cover with plastic wrap and refrigerate.
Whip heavy cream and gradually add sugar and continue to whip until desired consistency.
Spoon banana and vanilla pudding in ramekin. Garnish pudding with slices of banana, add several tablespoons of sweetened whip cream and crumble Nilla wafers on top.
