We are so proud of our mei mei or little sister who graduated from college this week. In honor of her accomplishment, we made for her and her friends some chooclate fudge and chocolate butter cream Hello Kitty Cupcakes.
They were indeed party-perfect. We made a short cut and used a chocolate fudge cake mix. However, we made the chocolate butter cream from scratch. The super moist cake was covered in deep chocolate flavor butter cream. We added the Fun Pix toothpicks and Hello Kitty shaped sprinkles, which really added the whimsy and fun.
Chocolate Buttercream Frosting
- 1/2 cup (t stick) unsalted butter, softened
- 3 cups confectioners’ sugar
- 1/2 cup cocoa powder or melted baking chocolate (I used cocoa powder this time)
- 1 teaspoon vanilla extract
- 4-5 tablespoons water
- 1/2 tsp salt
