Mexican Breakfast Quesadilla

We were itching for Mexican breakfast quesadilla and decided to make our own with a bit of shredded cheddar cheese, eggs and Vegetarian refried beans. The crisp flour tortilla with melty cheese and warmed beans were filling and satisfying.

Serves 1

  • flour tortilla
  • 2 Pete and Gerry’s eggs
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup vegetarian refried beans
  • 2 T butter, coconut oil or Earth Balance

Heat 1 T of oil or butter in a pan. Fry eggs to preferred doneness and salt and pepper to taste. Set aside. Toast tortilla on both sides until lightly brown and crisp. With a spoon spread refried beans onto tortilla. Then lay the eggs on top and sprinkle cheddar cheese on top. Fold tortilla in half and on a cutting board, slice the quesadilla into wedges. Enjoy.
