Good Ol’ Fashioned Banana Pancakes

Nothing beats a cup of tea and some fluffy and lightly sweet banana pancakes on the weekend mornings. These pancakes yield a nice stack with bits of sweet and creamy banana to go well with the syrup.

Adapted from AllRecipes

Yields 14 smaller pancakes or 10 large pancakes

  • 3 cups all-purpose flour
  • 62 teaspoons baking powder
  • 2 teaspoon salt
  • 2 tablespoon white sugar
  • 2 1/2 cups milk
  • 2 egg
  • 6 tablespoons butter, melted
  • 2 ripe bananas sliced 1/4 inches wide

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly oiled or sprayed  frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown one side of pancake and then add banana slices to uncooked side and flip to cook side with banana slices. Serve hot.
