Preheat the oven to 350. Spray an 8-inch springform pan with cooking spray.
Add the graham crackers and butter to a food processor. Process until it is fine crumbs.
Press the crumbs into the bottom of an 8-inch springform pan.
Add the cream cheese, sour cream, sugar, eggs, and vanilla to the food processor. Process until the batter is smooth.
Gently cut five or six of the Christmas tree cakes ½ inch from the top. You are cutting off the decorative top to use later on top of the cheesecake. Reserve the decorative tops for later.
Cut the bottom of the cakes into bite-sized pieces.
Pour the cheesecake filling on top of the crust. Top with cake pieces. Press them down gently.
Bake for 50-55 minutes or until the center only jiggles slightly.
Top with the sour cream topping. Bake for an additional 5 minutes.
Cool to room temperature. Top with the reserved tree cake tops.
Chill for at least 4-6 hours before serving.
Notes
Tree Cakes - I used 5 tree cakes in the cheesecake and the top of a 6th cake for decoration. They come 5 in a box. You can use 5 if you want.
