Instructions
Preheat oven to 350. Line a 9 inch cake pan with parchment paper and spray with cooking spray.
Mix ¼ cup sugar and cinnamon with the apples in a medium bowl and set aside.
In a large bowl, mix the remaining ingredients to make the batter.
Spread the batter in the prepared pan. It will be thick.
Lay apples on top in a circular pattern.
Bake for 45 minutes or until a toothpick comes out clean and the edges are golden.
