Instructions
Preheat the oven to 350. Line a 9x13 pan with parchment paper or spray with cooking spray.
Cream together the butter and sugars until smooth.
Mix in the egg and extracts.
Mix in half the flour, the baking soda, and the salt until smooth. Add in the remaining flour just until incorporated.
Stir in the sprinkles and white chocolate chips.
Spread in the prepared pan.
Bake for 18-20 minutes until the center no longer jiggles and the bars are golden brown. Cool completely.
Topping
Melt white chocolate chips and coconut oil in the microwave. Microwave for 15 seconds and then stir. Repeat until they are melted.
Drizzle or spread the melted white chocolate over the cooled blondies. Scatter the remaining sprinkles on top.
Chill for 10 minutes or until the chocolate is firm enough to cut.
Notes
Topping - If spreading the white chocolate like icing double the amount.
