Instructions
Preheat the oven to 350. Line a mini muffin pan with foil liners and spray with cooking spray.
Brownie Layer:
In a medium bowl stir together the cocoa powder and baking soda. Add half the butter and mix well.
Add the hot coffee. Stir until the mixture thickens.
Add the remaining butter and eggs. Mix well. Now, add the dry ingredients and vanilla.
Mix until smooth.
Drop dollops with a small cookie scoop in the prepared muffin pan.
Cookie Layer:
Cream together the butter and sugars until smooth.
Mix in the egg and vanilla.
Mix in half the flour, the baking soda, and salt until smooth. Add in the remaining flour just until incorporated.
Stir in the chocolate chips. Drop spoonfuls on top of the brownie batter.
Bake for 14-16 minutes or until golden brown and no longer jiggly in the center. Cool completely.
