Preheat the oven to 350. Line an 8x8 pan with parchment paper.
In a large bowl stir together the flour, sugars, cocoa powder, baking soda, and salt.
Add the egg, vanilla, and butter. Mix until smooth.
Stir in the chopped oreos and half the white chocolate chips.
Spread half the batter in the prepared pan. Top with the whole oreos. Add the remaining batter, dropping small dollops between the cookies. Sprinkle with the reserved chocolate chips.
Bake for 18-22 minutes, until barely set.
Optional: Melt an additional ¼ cup of white chocolate chips with ½ teaspoon of coconut oil and drizzle over the top of the cooled bars.
