Preheat the oven to 350. Line a 9x13 pan with parchment paper or spray with cooking spray.
Cream together the butter and sugars until smooth.
Mix in the egg and extracts.
Mix in half the flour, the baking soda, and the salt until smooth. Add in the remaining flour just until incorporated.
Very gently fold the peaches. Spread in the prepared pan.
Optional: Drop dollops of peach jam on top and swirl gently.
Bake for 35-40 minutes until the center no longer jiggles and the bars are golden brown. Cool completely.
Notes
*** You MUST use flavorful peaches for the blondies to have a peach flavor. Fresh peaches or frozen peaches both work as long as they have a vibrant flavor. For frozen peaches, thaw just enough to cut them.
