Instructions
Cook pineapple in a medium saucepan over medium-low heat for about 8-10 minutes or until juicy. Squish with a potato masher to release the juices.
Combine water and cornstarch in a small bowl.
Transfer to a food processor and add the cornstarch and sugar.
Process until the jam has just small chunks.
Return to the pot. Cook for 2-3 minutes until thickened and bubbly.
Let cool to room temperature. Transfer to a mason jar and store in the fridge.
