Instructions
Preheat the oven to 425. Grease an 8x8 baking dish
Add flour, sugar, baking powder, and salt to a food processor. Pulse a few times to mix. Add the slices of butter. Pulse until it is small crumbs.
Add the buttermilk, lemon zest, and vanilla. Process until a dough forms,
Drop 9 large spoonfuls of dough into the pan in three rows of three,
Bake for 20-25 minutes or until golden brown.
Strawberry Shortcake
Cool biscuits to room temperature. Slice and serve with fresh sliced strawberries and whipped cream or vanilla ice cream.
Notes
Buttermilk Substitute:
Combine whole milk with 1 tablespoon of white vinegar. Let sit for 5 minutes.
