I love strawberry shortcake with sweetened biscuits. It is simple but so delicious, especially in the summer when ripe berries are easy to find. It only takes a few minutes to whip up this simple recipe for easy lemon biscuits. This is based on my popular 3-Ingredient Biscuit Recipe with just a few more ingredients for sweetness and lemon flavor.

- All purpose flour - Used to create the main basis for creating homemade biscuits. You can also use self-rising flour and omit the baking powder and salt.
- Sugar - For a pop of added sweetness.
- Baking powder - Helps to give the biscuits a lighter texture.
- Salt - For flavor.
- Salted butter - If all you have is unsalted butter, add a bit more salt.
- Buttermilk - You can buy this at the store or make your own by mixing one tablespoon of lemon juice with one cup of milk. Let the mixture stand for about 10 minutes before using.
- Lemon zest - Use a zester for fresh lemon zest.
- Vanilla extract - For flavor.

How to Make this Lemon Biscuits Recipe
The simple steps to make this extra special treat are below.
Preheat the oven to 425 degrees. Grease an 8x8 baking dish.
Step One: Add the sugar, flour, baking powder, and salt to a food processor and pulse a few times.
Step Two: Add the slices of butter and pulse into small crumbs. It will look like sand.
Step Three: Add the lemon zest, vanilla, and buttermilk, and process until a soft dough forms.
Step Four: Drop large spoonfuls into the pan in rows of three. It will be sticky.
Step Five: Bake for 20-25 minutes. They will be golden brown with no wet spots between them.
Step Six: Top with fresh berries, whipped cream (or vanilla ice cream), and enjoy!
Top Tip
You can also use lime zest or orange zest in this recipe to change the flavor! Talk about a simple tip and idea to keep this recipe new and delicious.
Substitutions
- Extract - Omit the citrus zest and try almond extract or maple extract in addition to the vanilla extract.
- Brown sugar - Brown sugar could be used instead of the white sugar for a warmer taste.
Variations
- White chocolate chips - If you want to make these biscuits sweeter, you can add a small amount of chocolate. I like pairing white chocolate with lemon desserts.
- Glaze - Mixing powdered sugar (aka icing sugar) with milk and lemon zest to make a glaze is a great way to make them sweeter, like a dessert.

To make the best biscuits, you'll want to have a measuring cup, mixing bowl, food processor, fine grater, wooden spoons, parchment paper, baking sheet or baking tray, and cooling rack or wire rack.
Storage
Leftovers of this easy biscuit recipe can be stored in an airtight container at room temperature for 2-3 days or in the fridge for 4-5 days. These baked biscuits can also be frozen by storing in a freezer-safe container or freezer bag.
If the stored biscuits dry out a bit, you can simply pop them into the microwave and reheat them for a few seconds. This will soften them and they'll be good as new!
Common Questions
In a pinch, a stand mixer will work, but a food processor is a better option. It cuts in the cold butter as opposed to blending it in.
If you do use an electric mixer or stand mixer your biscuits won't be as flaky.
A better option would be to use a handheld pastry cutter.

- 10 tablespoon cold salted butter sliced into ½ inch pieces
