Ingredients
- All-purpose flour - I use all-purpose flour for the flour mixture.
- Salted butter - This needs to be cold to work correctly in the shortbread dough.
- Brown sugar - Pack it tightly when measuring.
- White sugar - Adds sweetness to the cookie dough.
- Egg white - Great for binding the dry ingredients together to form the dough.
- Cinnamon - A must for that cinnamon flavor.

How to Make Cinnamon Shortbread Cookies
Preheat the oven to 350 degrees. Add parchment paper to a baking sheet.
Step One: Add the ingredients into a food processor and pulse until the dough starts to form. This will take about 2-3 minutes.
Step Two: Pour out the mixture onto the parchment-covered cookie sheet. Press the dough together with your fingers into an 8X8-inch square.
Step Three: Cut the square into rectangles using a pizza cutter.
Step Four: Spread out the cookies so that there is room between each of them.
Top Tip
You can make any shape shortbread you want! You can chill logs of dough and slice them, use cookie cutters, or cut squares, triangles, or diamonds.
Step Five: Put them in the fridge to chill for about 15 minutes. Once chilled, place the pan in the oven and bake for 10-12 minutes or until golden brown.
Storage
To store leftover cookies, you'll want to let them cool down completely to room temperature before storing them in an airtight container or cookie jar. You can also store layers of cookies by placing a sheet of parchment paper between each layer.
Freezing these cookies for later is as simple as adding the cooled cookies to a freezer-safe container or bag.
Substitutions
- Spices - You can always add extra cinnamon if you want to these cookies. Try swapping in pumpkin spice for a fall treat!
- Unsalted butter - If you only have unsalted butter, add a little bit of salt to the dough when making it.
Variations
- Vanilla extract - You can easily add a hint of vanilla flavoring to these cookies.
- Toppings - If you want to add icing, a drizzle, or sweetness, or a glaze to the top of these baked cookies, go for it.
