Eggs - I use large eggs as the binding agent to make the muffin batter.
Plain Greek yogurt - This is a great way to keep the muffins moist while baking.
Oil - You can use vegetable oil, canola oil, melted butter, or melted refined coconut oil.
White sugar - For sweetness.
Brown sugar - For extra sweetness and also helps to add a brown coloring. I normally buy light brown sugar but dark brown sugar works as well.
Vanilla extract - I use pure vanilla extra for the most flavor.
All-purpose flour - This is the main ingredient needed to create the muffins.
Baking powder - Adding this helps to create a fluffy muffin texture.
Rolled oats - This pairs well with the topping ingredients for a nice texture.
Salted butter - Salted butter is best for this buttery cinnamon streusel topping recipe.
Ground cinnamon - Cinnamon gives these a warm flavor with a hint of spice. Depending on your taste preference, you can add more or less of this.
How To Make This Cinnamon Streusel Muffins Recipe
Step One: Preheat the oven to 350 degrees. Line a muffin tin with muffin or cupcake liners and also spray them with nonstick cooking spray.
Step Two: Beat the eggs, oil, yogurt, vanilla, and sugars in a large bowl with a mixer.
Step Three: Add the dry ingredients to the wet ingredients and mix until just incorporated.
Step Four: Divide the muffin batter between the muffin liners.
Step Five: Mix all the topping ingredients in a medium bowl.
Step Six: Sprinkle the topping mixture over the muffin batter and press down slightly.
Step Seven: Put the muffin pan in the oven and bake for 25-30 minutes.
Step Eight: Let the muffins cool in the baking pan for 5 minutes, then transfer to a wire rack and cool.
Variations
Use sour cream - If you don't have plain yogurt, sour cream can be used instead.
All almond extract - Instead of using vanilla, you can swap that flavor out for almond extract. This will give the muffins a great taste!
Add fruit - You can easily add chopped bits of apple to this tasty muffin recipe to create delicious apple cinnamon muffins. Blueberry muffins would be delicious, too.
Leave off the crumbly streusel topping - If you don't want to make the streusel recipe, you can top these muffins with your favorite thing. Powdered sugar or even just a cinnamon sugar mixture works. Or just sprinkle the top with some Vanilla Almond Granola.
Glaze - You can make an optional glaze for these. Just mix a couple of tablespoons of powdered sugar with a couple of drops of milk in a small bowl.

Can I make mini muffins with this recipe?
Absolutely. The best way to make mini muffins is to follow the same steps on the recipe card and then cut the baking time. I would start checking the muffins around the 10-15 minute mark and keep a close eye on them while they are baking the first time you make them. Use the toothpick test to insert a clean toothpick in the middle to make sure that they're fully cooked.
Why are my muffins soggy?
If you do decide to add fruit, be sure that you thaw any frozen fruit completely and drain off any excess juice. The juice or liquids do get released as the fruit thaws and is baked, so this step is important to not end up with soggy or even ruined muffins. ​
Can I freeze baked muffins?
Yes, muffins can be frozen. Once they have cooled down completely, store the leftover muffins in an airtight container or freezer-safe bag. When you're ready to eat, just move them to the fridge to thaw or set them out at room temperature.

Cinnamon Streusel Muffins Recipe
Ingredients
Muffins
- 4 large eggs
- 1 cup plain yogurt
- ½ cup oil
- ½ cup white sugar
- ½ cup brown sugar
- 2 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 2 teaspoon baking powder
- ½ teaspoon cinnamon
Topping:
- ½ cup rolled oats
- ¼ cup flour
- ¼ cup brown sugar
- ¼ cup salted butter
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350. Line 18 holes of a muffin pan with paper liners and spray with cooking spray.
- Beat eggs, yogurt, oil, sugars, and vanilla together in a large bowl with an electric mixer until light and fluffy.
- Add dry ingredients and mix just until incorporated.
- Divide between prepared muffin tins.
- Mix the topping ingredients together in a medium bowl.
- Sprinkle over the muffin batter. Press down slightly.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25-30 minutes.
- Cool in the pan for 5 minutes. Transfer carefully onto a wire rack. Let cool completely.
