Ingredients
- All-purpose flour - One of the most important dry ingredients to make the cookie dough.
- Salted butter - I've never used unsalted butter for this recipe - only salted. If you have only unsalted, I'd add a little bit of table salt.
- Egg white - Save the egg yolk and use it in another recipe!
- Vanilla extract - Adds the best vanilla flavoring.
- Cream cheese - A must for the cream cheese center.
- Powdered sugar - You'll need this for the sugar mixture in the filling and the cookie.
- Strawberry jam or preserves - This will be added to the top of the cookies.

How to Make Strawberry Cheesecake Cookies
Preheat the oven to 350 degrees. Cover a lined baking sheet with parchment paper.Â
Step One: Add all the dough ingredients into a food processor and mix.
Step Two: Divide the dough into 10 balls. Make a well in the middle of each.Â
Step Three: ​In a mixing bowl, stir the cream cheese and 1 tablespoon of the powdered sugar. Make sure the sugar is mixed in thoroughly.
Step Four: Divide the cream cheese mixture between the cookies.
Step Five: Divide the jam between the cookies. You can layer the toppings, swirl them, do half and half, or whatever you'd like.
Step Six: Put the cookie sheet in the oven and bake for 14-16 minutes.Â
Top Tip
To easily make a well in the center of the cookies, you can put a little bit of flour on the back of a rounded spoon (like a measuring tablespoon) and press it down into the cookie dough balls.Â
Substitutions
- Fresh strawberries - If you have ripe strawberries during strawberry season finely chop them, mix them with a little cornstarch and powdered sugar, and use them instead of the jam or fruit filling.Â
Variations
- Strawberry extract - Add more strawberry flavor by adding some strawberry extract.
- Graham crackers - For a fun texture, crumble up a graham cracker cookie and roll the dough in the crumbs before creating the well. The graham cracker crumbs will add a fun "crust" texture to each bite. You could also do the same with finely chopped nuts.
- White chocolate chips - You can sprinkle some white chocolate chips on top of these strawberry cream cheese cookies.
- Filling - You can also choose any type of fruit filling to use. It doesn't have to be strawberry!

BE AWARE: This battery was SUPER dry for me, I don't have a food processor so used a stand mixer with a paddle attachment, the dough was like pie crust mix before you add the water. Add a teaspoon to a tablespoon of milk to get a workable dough.
