Ingredients
- Strawberries - I love using fresh strawberries, but you can also use frozen strawberries. If you're lucky enough to have your own strawberry patch, you could always freeze some to use for this later! I'll also buy strawberries when they're on sale at the store and freeze some of them.Â
- Salted butter - Make sure that it's softened so that it mixes easily.
- Powdered sugar - This adds the sweetness to the frosting.
- Strawberry puree - Adds more of that yummy strawberry taste.

How to Make Homemade Strawberry Icing
Step One: Cook the strawberries in a pot on the stove over low heat until they are warm and juicy. Press the fresh strawberry puree through a fine mesh sieve, and let cool completely.Â
Step Two: Cream the butter with a mixer until smooth. I use a hand held electric mixer for this recipe.
Step Three: Add the powdered sugar one cup at a time alternating with the berry mixture.
Step Four: Mix on low for 30 seconds and then medium for 1 minute. It will get lighter and fluffy.
Step Five: Add to a piping bag, if desired.
Step Six: Use the homemade strawberry frosting on the cupcakes or cake of your choice.
Top Tip
Adjust the strawberry frosting recipe to your desired consistency. If it is too thin you can add a bit more powdered sugar to make a thicker consistency. If it is too thick add a little milk. Add a little bit at a time until you get the right consistency for all your favorite desserts.Â
Variations
- ​Vanilla extract - Adding a little bit of this pairs really well with the flavor of the real strawberries.
- Lemon juice - A little bit of fresh lemon juice easily adds a fun citrus taste.
- Strawberry powder - If you don't have fresh strawberries, you can still achieve that strawberry flavor by using flavored powder. Just grind freeze-dried strawberries in a small blender or food processor.
- Other berries - Swap out the strawberries for raspberries, blackberries, or blueberries to make other flavor frostings.

Storage
The good news is that once you make this fresh strawberry frosting, you can use it right away or save some for later. Store it in an airtight container in the fridge until you are ready to use it. For the best flavor, use within 2-3 days.

All the desserts! Chocolate cake, strawberry cupcakes, Angel food cake, and all sorts of cakes and cookies. There are so many different ways that this fresh fruit frosting can be used - so have fun trying out all the different combinations. I use it on my Strawberry Banana Cupcakes.
I always set my butter out at room temperature to soften it. If you're in a hurry, you can use the microwave for on defrost, but just be careful to not melt it as that does affect the outcome and texture of desserts. On my microwave 15 seconds on defrost is perfect but microwaves vary a lot.

Ingredients

- 4 oz strawberries fresh or frozen
Frosting
- 4 oz salted butter softened
- 2 cups powdered sugar
- 2 oz strawberry puree
Instructions

- Cook the berries over low in a small saucepan until warm and juicy. Press the mixture through a fine mesh sieve. Cool completely.
Frosting
- In the bowl of a stand mixer, cream the butter until smooth.
- Add in the powdered sugar a cup at a time, alternating with the berry puree.
- Mix on low speed for 30 seconds and then medium speed for about a minute. Stop the machine, scrape down the sides and mix again. If the frosting appears too lumpy and dry, add a tablespoon of milk, only if needed. Mix again.
