How to Make Lime Sugar Cookies
Preheat the oven to 350 degrees. Add parchment paper to two baking sheets.
Step One: Use a hand mixer or electric mixer and beat the butter until creamy. Add the sugar and mix until light and fluffy.
Step Two: Add the eggs and mix until smooth.
Step Three: Add the flour and lime zest. Save the remainder of the limes for another recipe.
Step Four: Mix until just incorporated. It is easiest to get the batter smooth with a hand mixer.
Step Five: In a different bowl, stir the sugar and lime zest and set aside. Scoop the dough with a medium cookie scoop. Roll the cookie dough balls into the sugar mixture and set on the cookie sheets.Â
Step Six: Put the pan in the oven and bake for 14-16 minutes or until the cookie edges are lightly brown. Let cool on the baking sheet.
Top Tip
Save the limes after zesting to make limeade or a Virgin Moscow Mule with their juice!
Substitutions
- Regular limes - You can use any type of lime for this cookie recipe. You can also add a bit of key lime juice or fresh lime juice for a pop of flavor.
Variations
- Coconut lime sugar cookies - Adding a little bit of coconut extract is a great way to change the flavor of the original recipe. You can also add vanilla extract for a fun vanilla flavor.
- Lemon sugar cookies - Instead of making chewy lime cookies, add lemon zest or lemon juice for lemon cookies.
- Topping - Making a light lime buttercream frosting, or adding a lime glaze, would be perfect and not take much time.
- Food coloring - Turn these sweet treats green with a little bit of green food coloring. I prefer all-natural food coloring.
- Chocolate - Melting some white chocolate chips and drizzling them on top sounds like a great idea! You could also mix them into the dough before scooping.

Equipment
All you need to make these cookies is a parchment-lined baking sheet, a hand mixer or stand mixer, mixing bowls, and a cookie scoop.
Storage
Storing leftover lime cookies is a breeze. Let the cookies cool to room temperature on a wire rack or plate, then add them to an airtight container. They can be stored at room temperature or in the fridge.
You can also freeze them by putting them into a freezer-safe bag. They should stay good for months this way. To thaw, move to the fridge or let them sit out and come to room temperature.
Common Questions
Be sure that you measure out all the ingredients carefully, and then follow the baking time. This will give you the best results without fail!Â
Not at all! I use a zester, wash the lime, and just zest some of that bright green outer layer. It doesn't take a lot to get that lime flavoring into the cookies!
