Ingredients
- Butter - If you use unsalted butter, add an extra pinch of salt.

How to Make Birthday Cake Blondies
Preheat the oven to 350 degrees. Add parchment paper or non cooking spray to a 9X13-inch baking pan.
Step One: Add the sugars and butter to a large mixing bowl. Cream until smooth.
Step Two: Mix in the extracts and egg.
Step Three: Mix in ½ the flour, the baking soda, and the salt until smooth. Add the rest of the flour and mix until just incorporated.
Step Four: Add the sprinkles and the chocolate chips. Stir until they are evenly distributed.
Step Five: Spread the mixture into the baking pan.
Step Six: Put the pan in the oven and bake for 20 minutes or until the center is no longer jiggly and the bars are golden brown. Cool completely.
Step Seven: To make the topping, melt the chocolate chips and coconut oil in the microwave in 15-second bursts. Stir, and repeat until melted. Drizzle or spread the melted chocolate over the top of the cooled blondies. Add the rest of the sprinkles on top. Chill the blondies for 10 minutes or until the chocolate has firmed.
Top Tip
Be sure that the blondies come to room temperature before adding any toppings. If you add too early, the toppings will melt off or into the blondies.

Birthday Cake Blondies
Ingredients
- 1 cup butter
- ½ cup sugar
- ¼ cup brown sugar
- 1 egg
- ½ teaspoon vanilla
- ½ teaspoon almond extract
- ½ teaspoon butter extract
- 1.5 cups flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup white chocolate chips
- ½ cup rainbow sprinkles
Topping
- ½ cup white chocolate chips
- ½ teaspoon coconut oil
- 2 tablespoon rainbow sprinkles
Instructions
- Preheat the oven to 350. Line a 9x13 pan with parchment paper or spray with cooking spray.
- Cream together the butter and sugars until smooth.
- Mix in the egg and extracts.
- Mix in half the flour, the baking soda, and the salt until smooth. Add in the remaining flour just until incorporated.
- Stir in the sprinkles and white chocolate chips.
- Spread in the prepared pan.
- Bake for 18-20 minutes until the center no longer jiggles and the bars are golden brown. Cool completely.
Topping
- Melt white chocolate chips and coconut oil in the microwave. Microwave for 15 seconds and then stir. Repeat until they are melted.
- Drizzle or spread the melted white chocolate over the cooled blondies. Scatter the remaining sprinkles on top.
- Chill for 10 minutes or until the chocolate is firm enough to cut.

Excellent bars! I burned mine a bit though. The power went off and on a couple times and I should have checked them a few minutes before the 20 minutes were up. Also, a reminder to drizzle the topping, not spread it, it looks a bit strange if spread.
