How to Make Lucky Charms Cookie Recipe
Preheat the oven to 350 degrees. Add parchment paper to the baking sheets.
Step One: Cream the butter and sugars until they are nice and smooth.
Step Two: Mix in the vanilla and egg. I like to use an electric mixer for this recipe.
Step Three: Then, mix in ½ the flour, baking soda, and salt until smooth.
Step Four: Add the rest of the flour until just mixed. It may look a little dry but will hold together fine when scooped.
Step Five: Add the marshmallows. Stir.
Step Six: Make 24 cookie dough balls using a cookie scoop.
Step Seven: Put 12 on the prepared cookie sheet. I line my pans with parchment paper for easy clean up.
Step Eight: Bake in the oven for 12-14 minutes.
Top Tip
Add some green dye to turn these into easy St. Patrick's Day cookies. Just a little bit of coloring to the cookie base is all that is needed!
Variations
- White chocolate chips - Adding chocolate chips to these lucky charm cookies is a delicious idea! Just mix them into the dough, and when you make the dough balls to bake, they'll be full of chocolate goodness.
- Cookie bars -You can use this recipe to make quick cookie bar recipes, giant cookies, or any size cookies that you want. I like to keep them uniform in size which is why I use a cookie scoop, but many people use a large round cookie cutter to make this simple Lucky Charms cookies recipe.Â

Equipment
You don't need a ton to make these fun Lucky Charms cookies. A measuring cup, a large mixing bowl, and a stand mixer are the top items. You'll want a prepared baking sheet and a wire rack for the cookies, too.
Storage
If you have these cookies from St. Patrick's Day leftover, store them in an airtight container at room temperature. I like to keep mine in a plastic bag with a slice of bread so that they don't become stale.
You can also freeze these cookies by placing them in a freezer-safe container and storing them in the freezer.
To thaw, simply move them to the fridge or room temperature.
