I don't know what I like better... the cookie part or the brownie bottom... but who says I have to decide? I'll be just as content grabbing one for each hand and taste-tasting them over and over again.

Brownie Layer

How to Make Brookie Bites
Preheat the oven to 350 degrees. Add foil liners plus cooking spray to a mini muffin pan.
Step One: For the brownie layer, stir the cocoa powder and baking soda together in a bowl. Add ½ the butter and mix well. Add the hot coffee and stir until the mixture is thick.
Step Two: Add the rest of the butter and eggs. Mix well. Add the dry ingredients plus the vanilla extract. Mix until it is smooth. Drop dollops of the brownie mixture into the muffin pan, using a small cookie scoop.
Step Three: For the cookie layer, cream together the sugars and butter until smooth. Mix in the vanilla extract and egg.
Step Four: Mix in ½ of the flour, the baking soda, and salt until smooth. Add the rest of the flour until incorporated.
Step Five: Stir in the chocolate chips and drop spoonfuls on top of the brownie batter.
Step Six: Bake for 14-16 minutes or until golden brown and no longer jiggly in the middle. Let them cool completely.
Top Tip
Make sure to grease the mini muffin liners very well or they might stick to the cookie bites.

- Brownie mix - You can save some time by using a boxed mix for the brownie base. Just pick your favorite, and follow the steps on the box.
Variations
- Brownie bars - Don't feel like making them into bites? You can follow this recipe and make them in a baking pan, too. Just be sure that you follow the steps, and then pay close attention to the baking time. You will likely need to bake a bit longer so you don't end up with a gooey center.

To make these chocolate brownie cookie bites, you'll need a large bowl, muffin pan, measuring cup, spoon, and a separate bowl for additional mixing. You can also use a hand mixer, but it's not a requirement as long as you can mix and get out all the lumps.
Storage
Leftover chocolate chip brownie bites need to be stored in an airtight container. I keep mine in the fridge, and let them come to room temperature before eating. You can also freeze these brownie bites by adding them to a freezer-safe bag or container.

You can sub in hot water if you prefer but you really can't taste the coffee. It is used to enhance the flavor of the cocoa powder. There is no need to add it if you don't want it in there. You can also use decaf coffee if you're worried about the extra caffeine.
