I love making these cookie brownie bars for a fun weekend or holiday treat. It's a great idea for sharing because it has two of the best dessert flavors all in one. One bite of this sweet sensation combo, and you'll be hooked. We're actually a split house as some like the brownie layer more than the cookie layer, and vice-versa, but the whole family does agree that we prefer this homemade version to anything that we've ever tried from a restaurant or store.

Cocoa powder - This gives the brownies their dark color and chocolate flavor.
Baking soda - Helps to add fluffiness to the dessert.
Salted butter - I love to use salted butter when baking as it naturally enhances the other flavors.
Hot coffee - Gives a mocha taste to the brownies.
Sugar - For sweetness.
Eggs - The main binding agent to hold all the ingredients together.
Flour - Needed to make the brownie batter.
Vanilla extract - Vanilla enhances the other flavors.
Salt - To balance the sweetness.
Chocolate chips - A must for any chocolate flavor!
Brown sugar - Adds the sweetness to the cookie batter.

How To Make Marbled Cookie Brownies Recipe
For the brownie batter:
Step One: Stir the cocoa powder and baking soda together in a bowl. Add ½ the butter and mix.
Step Two: Add the hot coffee and stir until thick.
Step Three: Add the rest of the butter and eggs and mix. Add the dry ingredients and vanilla.
Step Four: Stir in the chocolate chips until smooth.
Step Five: Add the batter to the prepared pan. (make sure that you added nonstick spray to the sides of the pan as well!)
To make the cookie dough batter:
Step One: Cream the butter and the sugars until smooth.
Step Two: Mix in the vanilla and the egg. The batter will be fluffy.
Step Three: Mix in ½ the flour, baking soda, and salt until smooth. Add the rest of the flour and mix until just incorporated. Stir in the white chocolate chips.
Step Four: Drop spoonfuls of the white chocolate chip cookie dough batter on top of the brownie batter. Gently swirl. It won’t cover all the chocolate batter.
Step Five: Put the pan in the oven and bake for 25 minutes.
Variations
Use a brownie mix - Even though I'm a much bigger fan of making this copycat recipe homemade, using a brownie mix for the brownie layer can be a fast and easy way to cut down on time.
Add toppings - You can drizzle the top of this easy dessert with caramel sauce for a sweet treat. (although favorite desserts like this are really perfect just like they are.)
Add more chocolate - These brownie cookies are already the perfect sweet indulgence combo, but there's always room for more chocolate. You can add chunks of chocolate to the center of this marble cookie brownie in between the layers for an added sweet surprise. This makes the perfect chunky chocolate bites!
Melted chocolate - Or you can drizzle the tops of the marbled cookie brownies with melted chocolate.

Marbled Cookie Brownies Recipe
Ingredients
Brownie Layer:
- â…“ cup cocoa powder
- ¼ teaspoon baking soda
- â…“ cup salted butter melted
- ¼ cup hot coffee
- 1 cups sugar
- 1 eggs
- â…” cups flour
- ½ teaspoon vanilla
- ¼ teaspoon salt
- ¼ cup chocolate chips
Cookie Layer:
- ½ cup butter
- ¼ cup sugar
- ¼ cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup white chocolate chips
Instructions
- Preheat the oven to 350. Line a 9x9 pan with parchment paper or spray with cooking spray.
Brownie Layer:
- In a medium bowl stir together the cocoa powder and baking soda. Add half the butter and mix well.
- Add the hot coffee. Stir until the mixture thickens.
- Add the remaining butter and eggs. Mix well. Now, add the dry ingredients and vanilla.
- Stir in the chocolate chips. Mix until smooth.
- Spread in the prepared pan.
Cookie Layer:
- Cream together the butter and sugars until smooth.
- Mix in the egg and vanilla.
- Mix in half the flour, the baking soda, and salt until smooth. Add in the remaining flour just until incorporated.
- Stir in the white chocolate chips. Drop spoonfuls on top of the brownie batter. Gently swirl. It does not need to cover all of the chocolate batter.
- Bake for 25-30 minutes or until golden brown and no longer jiggly in the center. Cool completely.

These came out under baked. The center was too gooey and raw. I baked at 350° for 25 minutes like the recipe instructions.

I'm sorry they were undercooked for you. Ovens can run differently. 25 minutes is a guideline but make sure to also look for golden edges, how jiggly the center is, and the overall color of the bars.
