This Honey Cookies Recipe is loaded with delicious honey flavor. Simple ingredients like cinnamon, vanilla, and brown butter help to round out the taste of this soft cookie, but the flavor of the honey really is the star of the show. This easy recipe creates the best chewy cookie!
I love having great options for homemade cookies when my sweet tooth starts talking. The hardest part about making these soft honey cookies is not eating the whole batch!
A great way to serve these cookies would be to add them to a Christmas cookie platter or to whip them up for a fun weekend snack. The chewy center is addictive, so be ready! The only changes that I would make to the recipe is that I would double it from the start!

How to Make this Honey Cookies Recipe
Preheat the oven to 350 degrees.
Step One: Add the butter to a pan and cook it over medium-low until brown.
Step Two: Add the honey and sugar. Heat over low heat until the sugar is melted. Cool the mixture to room temperature. It cools faster if you transfer to a bowl.
Step Three: Mix the cooled honey mixture with the eggs, vanilla, baking soda, and cinnamon.
Step Four: Slowly add the flour to the mixture and stir until the flour is incorporated. It will be thick. I use a hand mixer at low speed.
Step Five: Drop by teaspoons (or a small cookie scoop) onto a cookie sheet. Leave about 2 inches between each one. You can push lines into the cookies with a fork if you want.
Step Six: Bake in the oven until golden, which will take about 8-9 minutes. Don't overbake.
Top Tip
I always use parchment paper when baking cookies. They never stick to the baking sheet and it makes clean-up easier.
Substitutions
- Unsalted butter - I use salted butter for my baking recipes. If you want to use unsalted butter add an extra pinch of salt.
- Brown sugar - You can use brown sugar instead of white sugar in the cookie dough recipe if you want. This also helps with the golden brown coloring.
Variations
- Chocolate chips - The best way to add sweetness to this recipe is to add a few chocolate chips!
- Peanut butter - You can mix in a little bit of peanut butter to add a pop of flavor.
- Sweet spices - Try adding cardamom, nutmeg, ginger, or star anise. A little bit goes a long way!Â
