If you're a fan of white chocolate and raspberry flavors, it's time to make this bakery-style cookie right at home! The centers of the white chocolate raspberry cookies are loaded with yummy raspberry jam.
Out of all of my baked cookies recipes, these raspberry white chocolate cookies are ones that I think about all the time. And the best part? You can easily make these for Valentine's Day, the holidays, or as a sweet treat for your sweet tooth any time of year.

Ingredients
- Flour - The main dry ingredient used to make the cookie dough.
- Sugar - Used for added sweetness.
- Salted butter - Just be sure that it's softened before use.
- White chocolate chips - These will be used in the cookies and as a topping.
- Raspberry jam - The flavor in the center of the cookies. You can make jam from fresh berries or frozen berries if you'd like but buying a good quality store-bought jam will save time.

How to Make Raspberry and White Chocolate Cookies
Preheat the oven to 350 degrees. Add parchment paper to a baking sheet.
Step One: Mix all the cookie ingredients into a food processor or with a mixer. Use a cookie scoop and scoop out 16 balls of dough. Flatten them into circles.
Step Two: ​Put the pan in the oven and bake for 15 minutes or until the edges are golden brown. Let the cookies cool completely.
Step Three: Flip over half of the baked cookies and divide the jam between them evenly. Top with a second baked cookie.
Step Four: Melt the rest of the white chocolate. I melt it in the microwave slowly by stirring every 15 seconds.
Step Five: Dip each sandwich cookie into the chocolate so that it's covered halfway.
Step Six: Put the cookies on wax paper and put them in the fridge to set.
Top Tip
You can also melt white chocolate bars to get that creamy white chocolate to dip the cookies into.
Substitutions
- Frozen raspberries - If you want to use fresh or frozen raspberries as the filling, you can! It's a great way to add tart flavors to each bite. You will need to cook them into homemade jam. Just add a bit of sugar and a thickener like cornstarch (mixed with water). You could also use dehydrated raspberries or freeze-dried raspberries as well for a fun texture and taste.Â
Variations
- Brown sugar - Use this in place of white sugar.
- Vanilla extract - Adding a little bit of vanilla adds flavor!
- Almond extract - Another delicious option for adding flavor.
- White chocolate chunks - If you don't want to use extra white chocolate chips, use chunks instead. You can also use dark chocolate or milk chocolate.

Equipment
To make this white chocolate cookie recipe, you'll want to have a medium bowl or large bowl, a food processor or mixer, a cookie sheet or a large baking sheet, and a cookie scoop.
Storage
Once you make these flavorful cookies, you can store leftovers at room temperature in an airtight container. You can also add these chewy cookies to a freezer bag and freeze them as well.
To thaw, simply move them to the fridge to thaw overnight, or set them out at room temperature for a short time.

Be sure that you use cold butter and cut it into the dry ingredients. That is why it is easiest to make this cookie dough in a food processor.
Also, when you flatten the cookies on the baking sheet, make sure that you're pressing them down well together so that they stick together better while baking.Â

Raspberry and White Chocolate Cookies

Filling and Coating
- â…“ cup raspberry jam
- ½ cup white chocolate chips melted
Instructions
- Preheat oven to 350. Line a baking sheet with parchment paper.
- Mix the cookie ingredients in a food processor or with an electric mixer. Scoop 16 balls with a cookie scoop. Flatten into circles.
- Bake for 15 minutes until the edges are golden brown. Cool completely.
- Flip over half the cookies and divide the jam between them. Top with a second cookie.
- Melt the remaining white chocolate. Dip each sandwich cookie into the chocolate so it is half covered. Set onto a waxed paper-lined tray and place into the fridge to set the chocolate.
