Ingredients
Flour - I've had success with all purpose flour so you don't need specialty flour for this recipe.
Active dry yeast - Make sure that the yeast is fresh prior to using.
Kosher salt - Helps to balance the flavor.
Black pepper - Adds a bit of warmth.
Water - Thins the dough and also helps to activate the yeast. Water should feel warm to the touch but not hot.
Olive oil - Keeps the dough from getting overly sticky.
Shredded parmesan cheese - Gives the bread that cheesy goodness and flavor.
Fresh rosemary - This is a must for that rosemary taste.
Salted butter - You'll be using this to make the rosemary butter.
How to Make this Rosemary Parmesan Bread Recipe
Step One: Add the first 6 ingredients in a large mixing bowl.
Top Tip
You really do not need to knead the dough. You only need to mix it until it is well combined. A Danish dough whisk works very well for this purpose if you make bread a lot. Otherwise, a sturdy wooden spoon is fine.
Step Two: Mix using a dough whisk or spoon.
Step Three: Cover the bowl with a clean towel or plastic wrap and let rise for 2 hours. It will double in size.
Step Four: Put the dough on a lightly floured surface and sprinkle some extra flour on top. Shape the dough into a rectangle (10 X 14 in size) using your fingers.
Step Five: Sprinkle the fresh rosemary and cheese on top of the dough. Begin to roll up the dough starting at the short end.
Step Six: Keep rolling to form a boule shape. Pinch the ends so they stay together.
Step Seven: Let the roll rise, seam side down, for 45 minutes.
Step Eight: Place a Dutch Oven into the oven and preheat it to 450 degrees. Put the bread into the Dutch Oven once it is preheated and cover it with the lid.
Step Nine: Bake the dough for 30 minutes. Remove the lid, and bake for another 10 minutes. Take the Dutch Oven out of the oven and remove the bread.
Step Ten: Place the bread on a wire rack to cool for 2-3 hours before slicing.
Optional: To make the rosemary butter, combine the butter and the rosemary.
Variations
Bake this in a loaf pan - If you want to make this no knead rosemary parmesan bread in a loaf pan, you can! You'll need to alter the baking time from the recipe card directions, but it is possible and simple to do.
Turn this into pizza dough - Once this bread bakes and you taste it, you'll realize that you can make this into a crispy crust for pizza dough or any other texture. Using this rosemary parm bread recipe as pizza dough pairs really well with cheese and meat toppings! You can bake it directly on a pizza stone.
Herbs - Feel free to swap out the rosemary for any fresh herb you prefer. Thyme, sage, oregano, and basil all taste amazing. Or use a few in combination. Also, if needed you can use dried rosemary.
Cheese - The parmesan can also be replaced with another cheese such as blue cheese, feta cheese, romano, or cheddar. We like feta bread just as much as this.
Common Questions
How do I know if my yeast is still active?
Grab a medium bowl and add the yeast into it. Then add some warm water and stir. Give the yeast and water about 5 minutes to activate. If there is a "foam" that appears, then that is your indication that the yeast is active and good to use. However, if there is no foam, the yeast is old and needs to be replaced.
If you cook the bread with yeast that is no longer active, then it won't turn out like yeast bread in terms of being light and fluffy.
What is the best way to let the dough rise?
Part of the success of this recipe depends on the dough rising. Once the wet ingredients and dry ingredients are combined to make the dough, the best way to make sure that the dough rises is to place the dough in a bowl and cover it with a damp kitchen towel. I like to store the dough in the microwave while it is rising, so that it is in a place with controlled temperature and out of the way.
What is the texture of Dutch oven bread?
It's a combination of crusty bread and soft bread. The other edges are nice and crisp, while the middle of the bread is soft and tender. You can soften the other edge some by adding the rosemary butter recipe.

Rosemary Parmesan Bread
Ingredients
- 3.25 cups flour
- ½ tablespoon yeast
- 2 teaspoon kosher salt
- ½ tsp black pepper
- 1 â…“ cups water
- 1 oz olive oil
- 1 cup shredded parmesan cheese
- 2 tablespoon fresh rosemary finely chopped
Rosemary Butter
- 2 tablespoon salted butter softened
- ½ teaspoon fresh rosemary very finely chopped
Instructions
- Mix the first 6 ingredients together in a large bowl with a dough whisk or wooden spoon. Do not knead. Just mix until a shaggy dough forms.
- Cover the bowl and let rise for 2 hours.
- Dump the dough onto a lightly floured surface. Sprinkle flour on top. Press into a large rectangle (about 10" x 14") with your fingers.
- Sprinkle the parmesan cheese and rosemary over the dough. Roll up the dough starting at a short edge. Form the dough into a rectangular boule shape.
- Let rise for 45 minutes.
- Preheat a Dutch oven in the oven to 450.
- Carefully transfer the bread to the hot Dutch oven and cover it with the lid.
- Bake for 30 minutes.
- Remove the lid. Bake for an additional 10 minutes.
- Remove from the Dutch oven and let cool on a wire rack for at least 2-3 hours before slicing.
