This Blintz Casserole Recipe is a great recipe for breakfast, brunch, Jewish holidays, Mother's Day, and more. The blintz filling is fast and simple, creating the perfect sweet taste for any special occasion.
I'm hooked on the blintz filling. It's one of those creamy and sweet textures that combines crepes and a thin pancake with delicious blueberry filling. The flavor of the filling ingredients, paired with the soft and delicate outer layer, create the perfect prepared dish for any time of day.
I'm a huge fan of making this a delicious breakfast because it's one of the best ways to start the day. You can even switch up the type of filling to be fresh fruit or fruit jams, depending on your preference.

Ingredients
Butter - You can use salted or unsalted butter for this step. If you choose unsalted butter I recommend adding a pinch of salt.
Cheese blintzes - Buy pre-made frozen blintzes to save time.
Whole milk - This helps to thin out the filling mixture.
Eggs - Adds protein and helps to hold everything together while baking.
Flour - Adds texture and helps to bind the custard.
Sugar - Adds sweetness to the creamy custard filling.
Vanilla - Great for adding a pop of flavor.
Frozen blueberries - To use in the sauce topping.
Lemon juice - For a burst of citrus flavor.
How to Make this Blintz Casserole Recipe
Step One: Preheat the oven to 400 degrees.
Step Two: Pour the melted butter into an 8X8 baking dish and then add the cheese blintz on top.
Step Three: Mix all the ingredients of the custard together until smoother. Use an electric mixer for this.
Step Four: Pour the custard over the top of the cheese blintzes.
Put the pan in the oven. Bake for 25-30 minutes or until hot and golden brown.
Step Five: To make the blueberry sauce, heat the blueberries in a pan on the stovetop until they start to pop.
Step Six: Add the lemon juice and the sugar and stir until the sugar melts.
Step Seven: Cool the mixture to room temperature and then serve that with the casserole.
Top Tip
Do not thaw the blintzes before making this. It is best to make it while they are frozen. That way the batter around them cooks as they thaw and they won't get overbaked.
Variations
Add lemon zest - Even though lemon juice is used in the sauce recipe, adding a bit more citrus is great for adding flavor.
Add more vanilla - Another teaspoon vanilla extract is a simple way to add more flavor to this simple blintz casserole recipe.Â
Add orange juice - You can also swap out the lemon juice and use orange juice instead. Just be sure to use a splash only and without added pulp.
Use blueberry pie filling - If you want to save a few steps on this dish, you can add canned blueberry pie filling to really kick the sweetness level up a notch.
Common Questions
How do I serve individual blintzes?
The first time that you make this casserole dish, you might be wondering how to serve it. They're meant to be plated in a single layer, with fruit or even a dollop of sour cream on top.
The fun thing about making this cheese blintz casserole is that it feeds a crowd easily and gives everyone the chance to add the toppings that they want to add.
Can I change the batter ingredients?
The custard batter is based on a classic Dutch baked pancake.
I'm using already-made blintzes, but if you decide to make them from scratch, you can always create a unique taste using cream cheese or a little bit of cottage cheese for a more savory approach.
When should I serve baked blintzes?
This is the million-dollar question. Most people just end up eating them whenever the craving strikes, but typically they're served during breakfast or brunch or during special holiday occasions.
How do I store leftover fruit blintzes?
It's important to store the blintzes correctly once they're baked so that they're fresh and delicious for the next morning. Let the pan cool down all the way to room temperature, and then add the leftovers to an airtight container.
Once done, keep them stored in the fridge until you are ready to eat again. To reheat, warm in the microwave for a few short seconds until heated.
