The fun part about making this homemade vanilla almond granola recipe is that it's loaded with healthy ingredients. Raw almonds and rolled oats make the best granola recipe ever. The entire family will love this great recipe as a breakfast option, or topper for other delicious recipes.
I tend to keep all these pantry ingredients on hand for when the craving strikes. Luckily you can grab all the simple ingredients at the grocery store for this easy recipe - so that you can also whip up your own granola anytime of the day!

Ingredients
- Almonds - You can use raw almonds, sliced almonds, or even roasted for this healthy snack. We like the texture of sliced almonds or slivered almonds the best in granola.
- Rolled oats - Old-fashioned oats add a good texture to the recipe.
- Coconut - I love using coconut in granola. I used a combination of sweetened shredded coconut and large coconut chips.
- Sugar - For a bit of sweetness.
- Vanilla extract - For a hint of vanilla flavoring. You can use as much as you like. I've used up to two tablespoons for a stronger vanilla flavor. Or try use some vanilla bean paste.

How to Make Vanilla Almond Granola Recipe
Simple granola recipes like this are best with fruit fruit, in smoothie bowls, on top of yogurt, mixed with ice cream, or as a cold cereal with milk.Â
Start by preheating a skillet on the stove over medium-low heat.Â
Step One: Add the oats and nuts to the skillet.
Step Two: Stir for 5-8 minutes. They should be toasted.Â
Step Three: Turn the heat to medium-low and then add the vanilla and sugar to the pan.
Step Four: Stir until it melts. This will coat the nuts and oats.Â
Step Five: If it starts to get dark turn down the heat.
Step Six: Pour into a large bowl and let it cool. Stir it occasionally. I do this because the melted sugar helps the granola form clumps.
Top Tip
Watch the stovetop granola carefully so it doesn't burn.
Variations
- Natural sweetener - Swap out white sugar for some coconut sugar. You can even use a natural sweetener like monk fruit as long as it melts.
- Brown sugar - You can use brown sugar in the granola mixture if you prefer.Â
- Almond extract - Swap out the vanilla extract and use this instead.
- Dried fruit - Adding in some dried cherries, raisins, or blueberries would be a great way to add fun flavors to this easy vanilla almond granola. Add them in the last minute of cooking.
- Chocolate chips - It's never a bad idea to add chocolate. Just completely cool the granola before adding it.

Storage
The key to storing these crunchy granola clusters is to keep them stored in an airtight container at room temperature once they cool completely. If any air or moisture gets in, the granola will no longer be crunchy. It will absorb moisture, so being airtight is key.
I also must point out that if the granola does lose its crunch, you can still eat it - or try spreading it out on an even layer on a baking sheet, and warming it up in the oven for a short period fo time. That may do the trick for bringing back the crunch!Â
Common Questions
I see this granola recipe as more of a topper, or a mixer. I don't recommend pairing anything fresh with it, unless you are going to eat it right away. Putting this on top of fresh fruit would be delicious and a simple refreshing recipe for all to enjoy.Â
You can easily change the taste! Add a little bit of pumpkin spice to the mixture to make pumpkin spice granola for the fall months. You can also add flax seeds for a healthy kick!Â
If you want to add a bit of protein, put some of this on top of some almond butter toast, and enjoy! Â
I say go for it! Pair it with almond milk or any type of milk that you want, and dig in! You can start by making a small bowl, and then see what you think of the texture of the crunchy clusters.Â
There are so many different ways that you can enjoy this delicious recipe! In my photos, I enjoyed it with plain yogurt, thawed frozen strawberries. and a drizzle of honey. I'm going to try this combo drizzled with pure maple syrup next time.

Vanilla Almond Granola Recipe
Ingredients
- 2 cups sliced almonds
- 2 cups rolled oats
- 2 cups coconut
- 1 cup sugar
- 2-3 teaspoon vanilla
Instructions
- Preheat a large skillet over medium heat.
- Add the nuts and oats and stir for 5-8 minutes or until they are toasted.
- Turn the heat to medium-low. Add the sugar and vanilla to the pan. Stir until it melts and coats the nuts and oats. Watch carefully or it can burn.
- Transfer to a large bowl. Let cool, mixing occasionally. I let this granola cool in a bowl so any unmelted sugar will melt and so some clumps will form.
