Everyone will love the flavor of these Caramel Apple Oatmeal Cookies! They're made using fresh apples and loaded with caramel. These are the perfect soft cookies full of fall flavors. Full disclosure - you're going to want to make a double batch!Â
My family loves caramel apples and I love the texture of a soft oatmeal cookie so I decided to combine the two!
While this is a perfect fall cookie, it's one of my favorites for the holiday season, too. The best thing about making these cookies is that you can use various types of apples to change the flavor.Â
​Forget about your typical classic oatmeal cookies and try out this yummy option. The sweet caramel adds the perfect burst of sweetness, and the apples definitely bring out the flavor! These are the best cookies to make when you're craving a simple, comforting dessert.Â

Ingredients
- Butter - This helps to add richness and keep the cookies soft.
- Brown sugar - For sweetness.
- White sugar - For sweetness.
- Egg - The binding agent for the dry ingredients and wet ingredients.
- Water - Helps to keep the cookie dough mixture not too thick.
- Vanilla extract - For flavor.
- Oats - Adds the texture.
- Apples - Be sure that they are clean, peeled, and chopped finely.
- Caramel bits - For caramel flavor. While you can use cut up caramel pieces these are much easier to use and better for baking.
- Flour - All purpose flour is the main base used to make cookie dough.Â
- Salt - For flavor. If you want salted caramel cookies just add some coarse salt on top of the dough balls.
- Baking soda - To add texture to the cookies.

How to Make Caramel Apple Oatmeal Cookies
Preheat the oven to 350 degrees. Add parchment paper to two baking sheets.
Step One: Cream the sugars and butter in a large mixing bowl.
Step Two: Add the eggs, vanilla, and water. Mix until smooth.
Step Three: Mix in the dry ingredients.
Step Four: Add the prepared apples and caramel bits. Mix the dough until it is mixed well.
Step Five: Use a cookie scoop and scoop out 32 cookies. Add them to the baking sheet and leave a few inches in between.Â
Step Six: Put the pan in the oven and bake for 12-14 minutes or until the edges are golden brown.
Top Tip
You can also use shredded apple for these apple caramel oatmeal cookies if you want to change the texture!
Substitutions
- Apples - Changing the type of apples makes it easy to change the flavor. You can use Honeycrisp apples, Granny Smith apples, or any kind of apples that you want. A tart apple adds a great flavor contrast with the soft caramel bits.
Variations
- Spices - Another fun way to add flavor to these cookies is to add apple pie spice blend!
- Mix ins - Instead of caramel, you can add toffee bits. You could also add in caramel chips to this oatmeal cookie recipe as well as raisins to turn these into caramel oatmeal raisin cookies. The options are endless!Â

To keep these chewy oatmeal cookies nice and soft, store any leftovers in an airtight container and keep them stored at room temperature. You can also store them in the fridge.

Caramel Apple Oatmeal Cookies
Ingredients
- ¾ cup butter (1.5 sticks)
- 1 cup brown sugar
- ¼ cup white sugar
- 1 egg
- ¼ cup water
- 1 tablespoon vanilla
- 3 cups oats
- 1 cup apples peeled and finely chopped

Instructions
