How to Make Apple Crumble Cookies
Preheat the oven to 350 degrees. Add parchment paper to the baking sheet.
Step One: Mix the dough ingredients in a food processor.
Step Two: Pulse to create a dough. The dough will come together in a ball.
Step Three: Divide the dough mixture into ten cookie dough balls. Place them a few inches apart.
Step Four: Flatten the middle of each ball with your thumb or the back of a spoon.
Step Five: Divide the apple mixture between the cookies. It will shrink as it bakes so go ahead and pile it up.
Step Six: Add the ingredients needed to make the crumb to the food processor and pulse.
Step Five: Divide the mixture between the cookies. Press down slightly.
Step Six: Put the pan in the oven and bake for 16-18 minutes or until golden brown. Let the apple crisp cookies cool completely.Â
Top Tip
Using a cookie scoop takes away the hard work of trying to roll the cookie dough to make cookie dough balls. It also speeds up the process!
Variations
- Add oats - You can add rolled oats to the topping to give these cookies more of a chew.Â

Equipment
You'll need a food processor, rubber spatula, cookie sheet, cookie scoop, and cooling rack.
Storage
If you make a double batch like I do, you'll likely have leftovers! Store the leftover cookies in an airtight container and keep them in the fridge. They'll keep that apple flavor and be delicious for days. You can eat them chilled or let them come to room temperature.
Common Questions
You can use a stand mixer for this recipe as well. I prefer a food processor because it does a great job of breaking up the ingredients and making the dough, but a hand mixer or stand mixer will work just fine.Â
You can! Making a batch of these homemade cookies and then freezing them for later is a great idea.
Simply let the cookies cool down all the way before adding them to an airtight freezer bag. Once you're ready to eat, move them to the fridge and thaw.
Sure! Swap out the apple filling for pear filling or another firm fruit that isn't too wet. You can also fill the thumbprint with something else fun, like chocolate! There are always options for making cookie recipes something new! When you're the baker, you control the outcome!
