These easy Lemon Blondies are one of my favorite desserts to make when I'm craving something bright and fresh. They have a soft, chewy texture, plenty of lemon flavor, and just the right amount of sweetness. If you love lemon desserts, this easy recipe is one you'll find yourself making again and again.
There's just something about the combination of buttery blondies and fresh lemon that works so well. They disappear fast every time I make them, and I almost always keep a few lemons on hand just so I can whip up a batch when the craving hits.

Ingredients
- Butter - You'll need to have 1.5 sticks for this recipe. I use salted butter. If you have unsalted butter, add an extra pinch of salt.
- Sugar - Adds the perfect balance of sweetness.
- Egg - Helps to bind the dry ingredients together and give that brownie-like texture.
- Vanilla extract - Adds a pop of vanilla flavor.
- Lemon zest or lemon extract - Either works well. Bottled lemon juice or even fresh lemon juice will not work. The flavor is too subtle to make these taste lemony without ruining the texture.
- All purpose flour - Used to make the blondie batter.
- Baking soda - Adds texture to this easy recipe.
- Salt - For flavor.
- White chocolate chips - Pair really well with the zesty flavor.

How to Make Lemon Blondies
Preheat the oven to 350 degrees. Add parchment paper to a baking pan. (You can also use non-stick cooking spray)

Step One: Add the butter and sugar into a large bowl and cream until smooth. Mix in the vanilla extract, egg, and lemon zest or extract.

Step Two: Add half the flour, baking soda, and salt, and stir until smooth. Add in the rest of the flour and just mix until combined. Add the white chocolate chips.

Step Three: Stir to combine. Press the blondie batter into the prepared pan. If it is too sticky wet your fingertips with a little water.

Step Four: Put the pan in the oven to bake. Bake just until the bars are golden. The middle may jiggle slightly. They will continue to cook as they rest.

Step Five: Remove from the oven.

Step Six: Let the lemon bars cool completely before slicing.
Top Tip
If you love bold lemon flavor, add a little extra lemon zest. It gives these blondies even more fresh citrus flavor without making them overly tart.
Variations
- Lemon glaze - Even though this recipe doesn't call for a glaze, you can easily add one. Just mix confectioners’ sugar with a little milk and a few drops of lemon extract or zest. You could also add lemon icing instead of a sweet lemon glaze.
- Powdered Sugar - Dust the tops before serving.
- Orange Bars - Just swap in orange zest or orange extract. Lime also works well!

All you need to make these blondies is a baking pan, large mixing bowl, wooden spoon or rubber spatula for stirring, and a measuring cup. You'll be enjoying cakey brownie treats in no time at all.
Storage
Store leftover lemon blondies in an airtight container at room temperature for 2-3 days or in the fridge for up to a week.
They also freeze well. Wrap individual bars in plastic wrap or freeze the whole batch in a freezer-safe container for up to 3 months. Thaw at room temp for a few minutes before eating.

Common Questions
Any baking pan will work. Different pans may require a slightly shorter or longer baking time, so keep an eye on them and use the toothpick test to check for doneness.
These will firm up as they cool. If you prefer to have them softer in texture, you can pop them in the microwave for a few seconds (8-10 seconds) to warm and soften them a bit.
You can! While I love the white chocolate chips, you can easily add dark or semi-sweet, as well as crushed walnuts or macadamia nuts for more texture.

Lemon Blondies Recipe
Ingredients
- ¾ cup butter (1.5 sticks)
- ¾ cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 tablespoon lemon zest or extract
- 1.5 cups flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup white chocolate chips
Instructions
- Preheat the oven to 350. Line a 9x13 pan with parchment paper or spray with cooking spray.
- Cream together the butter and sugar until smooth.
- Mix in the egg, vanilla, and zest.
- Mix in half the flour, the baking soda, and the salt until smooth. Add in the remaining flour just until incorporated.
- Stir in the white chocolate chips.
- Bake for 30-35 minutes until the center no longer jiggles and the bars are golden brown. Cool completely.
