Top Tip
Using an large cookie scoop or an ice cream scoop to add the muffin batter into the cups is a great way to get uniform-sized muffins.
Substitutions
- Lemon zest - If you want to use lemon zest in place of the orange zest, you absolutely can.
- Light olive oil - This can be used in place of the coconut oil. Just make sure to choose one with a light flavor.
Variations
- Powered sugar - Putting a little bit of powdered sugar on top of the cooled muffins is a great topping idea if you don't want to make the glaze. You can also sprinkle with coarse sugar before baking.Â
- Greek yogurt - One of the top tips for keeping muffins moist, is adding a little dollop of Greek yogurt to the batter.
- Simple orange glaze - Drizzle this on top once they're done baking!
- Brown sugar - If you want to add brown sugar instead of regular sugar, you can.
- Lemon juice - Turn these into lemon poppyseed muffins by using lemon juice instead of orange juice. You'll get perfect muffins either way.

Common Questions
You can! Just get jumbo muffin tins for your batter. This recipe won't make as many jumbo muffins, but you can still use this recipe to do it. Also, you'll need to pay close attention to the baking time as they may take a bit longer to bake.Â
