How to Make Chocolate Brownies with Cream Cheese Frosting
Preheat the oven to 350 degrees. Grease a 9x13 baking dish or line with parchment paper.
Step One: Stir the cocoa powder and baking soda together in a large bowl. Add ½ of the melted butter, and mix.Â
Step Two: Add the hot coffee. Stir until the mixture is thick.
Step Three: Add the rest of the butter, vanilla extract, and eggs.
Step Four: Mix until they are incorporated. Don't overmix.
Step Five: Add the chocolate chips and mix until smooth.
Step Six: Spread the brownie batter into the baking dish. Put the pan in the oven for 30-35 minutes or until the middle of the brownies jiggle slightly. Let the baked brownies cool before icing.
Step Seven: Cream the cream cheese and butter with a hand mixer in a large mixing bowl. Add the powdered sugar slowly, then mix in the vanilla.
Step Eight: Spread or pipe on top of the brownies once they are cooled.
Top Tip
Don't overbake the brownies. You want to bake brownies until they are just set. The center may still jiggle slightly, and a toothpick will come out with moist crumbs.
Substitutions
- Cream cheese - I use full-fat cream cheese for the frosting, but reduced-fat cream cheese would work as well.
Variations
- Add color - Add a bit of food coloring to these brownies. A bright red color is a great way to make these gooey brownies into a fun treat for Valentine’s Day.
- Coffee - You can easily leave out the coffee to omit the added caffeine. Or even use decaf.
- Frosting - Add a little bit of unsweetened cocoa powder to the frosting to turn it into chocolate cream cheese frosting.
- Toppings - Skip the frosting altogether and drizzle some melted chocolate on top. Add your favorite sprinkles to create fancy brownies.
These Chocolate Cherry Brownies are another fun twist!
Equipment
You'll need to have a prepared baking pan, an electric mixer, a measuring cup, and a microwave-safe bowl to make the brownies and frosting.
Storage
Leftover brownies can be stored in an airtight container. They will need to be kept in the fridge due to the frosting ingredients.
While you can freeze brownies, I don't recommend freezing brownies with frosting. You can always freeze the baked brownies without frosting, and then make homemade frosting from scratch when thawing and serving.
Common Questions
More than likely, this means that you overmixed the batter or baked it for too long. Pay close attention to the baking time and stick to it for the best results.
Absolutely! I'm just a huge fan of cream cheese frosting, but any type of frosting will work. You can also save time and use store-bought frosting, too!
