Ingredients
- Brownie mix  - You can use your favorite brand, such as Ghirardelli.
- Salted butter - You'll use one whole stick for this brittle.
- Egg white - I use carton egg whites when I have them since this only calls for a tablespoon. Or save the egg yolks for another baking recipe!Â
- Mini chocolate chips - For added chocolate flavor.
- Water - Add just as much water as it takes for the batter to come together.

How to Make Brownie Brittle Recipe
Preheat the oven to 300 degrees. Line a 15x10 jelly roll pan or rimmed baking sheet with parchment paper.
Step One: Mix the brownie mix, butter, egg white, and the chocolate chips in a mixing bowl.
Step Two: Add the water as needed to form a brownie batter. You want a thick cohesive batter. Before the water, it will be sandy.
Step Three: Spread the chocolate mixture into the pan.Â
Step Four: Put the pan in the oven and bake for 40-45 minutes, until the brittle looks dry. This might take up to 1 hour.
Step Five: Let the brittle cool at room temperature and then break it into pieces. Spread out the brittle pieces.
Step Six: Bake again for about 20 minutes until firm. Turn off the oven and let the brittle rest as the oven cools down.Â
Top Tip
Spread the batter into a thin layer so that the brownie bark gets nice and crisp while baking. This can help with the cooking process to achieve that crispy texture.
Variations
- Caramel - Turn this into caramel brownie brittle easily by adding caramel baking bits or toffee bits.
- Espresso powder - Add a bit of a mocha flavor to these sweet treats. I would add a teaspoon if instant powder.
- Powdered sugar - Sprinkle this on top of the pan of brownies once you break them up!Â
- Chocolate chips - You can use white chocolate or dark chocolate chips for this brownie brittle. Try peanut butter chips for a Reese's inspired treat.
- Ice cream nachos - Use these as a chip for an ice cream nacho sundae. Add a couple of scoop to a bowl, drizzle with chocolate syrup or caramel sauce, top with whipped cream, and then eat using pieces of the brittle!

Equipment
You'll need a medium bowl or large bowl for this recipe, as well as an offset spatula to scrap down the sides. While a mixer isn't necessary for this recipe, you can use one with a whisk attachment to mix the batter if you prefer.Â
You'll also need a jelly pan roll, as well as parchment paper.
Storage
Once you make these brownie brittle treats, store them in an airtight container to store for later. You can keep them at room temperature 2-3 days, or store them in the fridge for longer. I've kept them for a couple weeks without issue.Â
You can also freeze any leftovers by storing them in a freezer-safe container and keeping them in the freezer. I eat them straight from the freezer.Â

I just break with my hands. You can use a pizza cutter to cut up the pieces or use a sharp knife as well if you want more uniform pieces. For this method cut the brittle as soon as it comes out of the oven the first time.
You can! Add sprinkles, melted semi-sweet chocolate chips or other melted chocolate, kosher salt for a salty sweet affect, or even melted caramel chips! Anything that you would add as a topping to traditional brownies would work here.Â

Ingredients
- 20 oz brownie mix such as Ghirardelli
- ½ cup salted butter softened (1 stick)
- 1 tablespoon egg white
- ½ cup mini chocolate chips
- 2-4 tablespoon water
Instructions
