Ingredients
- Salted butter - Be sure that it is softened so it's easy to mix. If you have unsalted butter, add an extra pinch of salt.
- White sugar- For added sweetness.
- Brown sugar - Adds sweetness and the golden brown coloring.
- Large eggs - A binding agent for the dry ingredients.
- Vanilla extract - Gives the vanilla flavoring.
- All purpose flour - The main ingredient in the dough.
- Baking powder - Adds texture.
- Salt - For flavor.
- Unsweetened coconut flakes - I use toasted coconut flakes for the best flavor and texture.
- Dried pineapple - Chop this up so there aren't big chunks.

How to Make Pineapple Coconut Cookies
Preheat the oven to 350 degrees. Add parchment paper to two baking sheets.

Step One: Mix the softened butter with a mixer until creamy in a large bowl with a hand mixer (or in the bowl of a stand mixer). Add the sugar and mix until fluffy. Add the vanilla extract and eggs. Mix until it is smooth.

Step Two: Add the dry ingredients and mix until they are incorporated.

Step Three: Fold in the shredded coconut and dried pineapple. Make sure they are evenly distributed.

Step Four: Scoop balls of the cookie dough using a cookie scoop onto the prepared cookie sheets. I use a medium scoop.

Step Five: Bake in the preheated oven for 12-24 minutes or until just golden brown around the edges.

Step Six: Let the cookies cool on the baking sheet for a few minutes. Transfer to a wire rack to cool completely.
Top Tip
When making cookies, don't overmix. That can make cookies tough or cakey. For the best chewy cookies, mix just until the ingredients are incorporated.
Variations
- Add ingredients - Crushing up some macadamia nuts and mixing them into the cookie batter can be a great option for more Hawaiian flavor.
- Coconut - Swap in shredded sweetened coconut for the flakes. It will make the cookies a little sweeter but still work. You can add coconut extract to boost the coconut flavor.
- Lemon zest - Adding a bit of lemon will complement the other flavors.

Storage
Once the cookies are baked, let them cool to room temperature and then store them in an airtight container. They can be stored on the counter or in the fridge. You can also freeze them for later by adding them to a freezer-safe bag. Thaw by moving to the fridge for a short time.

This recipe was designed for dried pineapple. Using crushed pineapple, fresh pineapple, or canned pineapple chunks will make the cookies too wet and change the texture.

Pineapple Coconut Cookies
Ingredients
- ¾ cup salted butter softened (1.5 sticks)
- ½ cup white sugar
- ¼ cup brown sugar
- 2 large eggs
- 2 teaspoon vanilla

- 1 cup dried pineapple chopped
Instructions
