When it comes to cookie recipes, these chewy oatmeal cookies are easily at the top of my list. They're the texture of classic oatmeal cookies but with a toasty flavor and a fun pop of sweetness. The browned butter adds a unique (but delicious!) flavor that really stands out. It's safe to say that these baked cookies won't last long, so you better grab a couple for yourself right away.
What puts these into the "perfect cookies" category is that they literally have the best texture. One bite gives you that amazing chew that just lets the flavor marinate in your mouth for a few seconds, making you excited for more.

Ingredients
- Butter - You can't make a brown butter oatmeal cookie recipe without the butter. I use salted, but if you do use unsalted, just add an extra pinch of salt later.Â
- Brown sugar - This adds sweetness and gives the cookies a nice golden brown color.
- White sugar - For added sweetness.
- Egg - To help bind the dry ingredients together to form the cookie dough.
- Water - Adding a bit of water helps soften the oats while baking.
- Vanilla extract - For flavor.
- Oats - Gives the cookies their chew.
- Flour - The base of the cookie dough.
- Salt - For flavor.
- Baking soda - Adds texture as the cookies bake.
- Semisweet chocolate chunks - For added sweetness.

How to Make Brown Butter Oatmeal Cookies
Preheat the oven to 350 degrees. Add parchment paper to two baking sheets.
Step One: Brown the butter in a pan over medium heat.
Step Two: Stir as the butter cooks. Once it is brown let it cool to room temperature.Â
Step Three: Add the room temperature butter and sugars into a mixing bowl and mix.Â
Step Four: Add the eggs, vanilla, and water.
Step Five: Mix in the dry ingredients.
Step Six: Stir until the dough is formed.
Step Five: Add the chocolate chunks and stir.
Step Six: Use a cookie scoop and scoop out 36 cookies.
Step Five: Place them onto the prepared baking sheets and be sure to leave a few inches between each one.
Step Six: Put the pan in the oven and bake for 12-14 minutes or until the edges are golden brown. Repeat.
Top Tip
Since this makes 3 dozen cookies you will need to bake in two batches. It is best to take the time to do this and not put the dough closer together because they will spread and touch.
Substitutions
- Chocolate chips - In the place of the chunks, you can use chocolate chips. You can also break up chocolate bars and use them, or change up the flavor and use dark chocolate, too. Butterscotch chips are another favorite in oatmeal cookies.
Variations
- Flaky sea salt - Adding a sprinkle of sea salt on the tops of the cookies is a simple way to add a sweet and savory taste.
- Make smaller cookies - If you want to make smaller cookies, you can - but you will need to alter the baking time and keep an eye on them as they will bake quickly.

Equipment
To make these brown butter oatmeal chocolate chip cookies, you'll need to have baking sheets or a cookie sheet, a medium saucepan, a large mixing bowl, a measuring cup, and a rubber spatula. You'll also need a cookie scoop as well.
Storage
​These chewy cookies make the best leftover dessert. Let them cool completely before adding them to an airtight container. You can keep them at room temperature or in the fridge - your choice.

Common Questions
The best way to make sure that you don't overbake the cookies is to pay attention to the edges. Once they start to turn golden brown, that is your clue that the cookies are done or very close. I also use my nose and notice that once I really start to smell the cookies, it's my cue that they're close.Â
Be sure to let the cookies cool for several minutes when you take them out of the oven, as they will firm as they cool.Â
