Ingredients
- Salted butter - I use salted butter for this recipe, as the salt in the butter is a key flavor addition. If you have unsalted butter simply add an extra pinch of salt.
- White sugar - For added sweetness.
- Brown sugar - For a warm flavor and to give the cookies a golden brown color.Â
- Flour - The basis of the cookie dough.
- Baking powder - To add texture to the cookies.
- Salt - For flavor.
- Egg - To bind the wet and dry ingredients together.Â
- Vanilla - Adding vanilla enhances the other flavors.
- Semisweet chocolate chips - For pops of sweetness.
- Butterscotch chips - To add a butterscotch flavor.

How to Make Chocolate Chip Butterscotch Cookies
Preheat the oven to 350 degrees. Add parchment paper to two baking sheets.
Step One: Mix the butter with a hand mixer or electric mixer until light and creamy. Add both sugars and mix until the texture is light and fluffy.Â
Step Two: Add the egg and vanilla extract.
Step Three: Mix until the batter is smooth. Scrape down the sides of the bowl as needed.
Step Four: Add the dry ingredients and mix until just incorporated.
Step Five: Mix in the chips. Make sure to distribute them evenly.
Step Six: Use a cookie scoop or spoon and drop cookie dough balls onto the prepared pans. Put the pans in the oven and bake for 12 minutes or until the edges are lightly brown.
Top Tip
You may notice when scooping cookies that the last few balls of dough have fewer chips than the first few. One simple way to fix this is to reserve a tablespoon of chips at the beginning and add them to the dough when they start to become more sparse.
Substitutions
- Dark chocolate chips - You can use other flavors of chocolate chips for this recipe. Peanut butter chocolate chips, white chocolate chips, dark chocolate chips, and more.
Variations
- Potato chips - Be crazy a bit and crumble up some potato chips and mix them in with the chips. This adds a fun crunch and a great sweet and salty combo!Â
- A sprinkling of sea salt - A little bit of flaky sea salt on top of each cookie is a nice flavor enhancer.
- Crispy edges - If you want to make a thin cookie, you'll have crispy edges instead of chewy.Â
- Add extra chips - If you want more chocolate chips, add 'em.Â
- Light brown sugar- You can use light or dark brown sugar for this recipe.
- Brown butter - Brown the butter before adding fit or a nutty flavor. Just make sure to cool to room temperature before starting to make the dough.

Equipment
To make these chocolate butterscotch chip cookies, you'll need to have a measuring cup, cookie sheet, mixer, bowl of a stand mixer, and medium-sized cookie dough scoop.
Storage
Leftovers of this butterscotch chocolate chip cookies recipe can be stored in an airtight container or sealable bag. They can be stored at room temperature or in the fridge.
You can freeze them in a freezer-safe bag as well!
Common Questions
These cookies are nice and chewy! To keep them chewy during storage, add a slice of bread to the air-tight container and that will soak up any excess moisture, leaving the cookies soft and fluffy.Â
You can also pop them in the microwave for a few short seconds to soften them up again if needed.
A good rule of thumb is to give cookies 2-3 inches of space to spread while they are baking. Some cookie recipes do spread more than others, but that is typically a good measurement of distance to abide by.Â
