How to Make Mini Smores Pies
Step One: Mix the chocolate chips and the heavy cream in a microwave-safe bowl.
Step Two: Heat it for 30 seconds, stir, then heat in 15-second increments, stirring after each time, until you have melted chocolate. Once it is 75% melted stop heating and just stir.
Step Three: Divide the chocolate between the crusts.
Step Four: Place the crusts in the fridge to chill for 10 minutes. Put the pies on a metal baking sheet. Put the marshmallows on top of the chocolate.
Step Five: Preheat the broiler. Broil for 30 seconds or until the marshmallows are toasted.
Top Tip
Be sure that you pay close attention to the marshmallows while they are broiling. They will burn easily!
Substitutions
- Graham crackers - If you want to make your own graham cracker crumbs and pie crust, you can! Just use some butter to pair with the crumbs, and then mold them into the muffin tin.
- Kitchen torch - If you're not a fan of using the oven to get the top of the marshmallow golden brown, you can use a kitchen torch.
Variations
- Chocolate - Instead of using semisweet chocolate chips, you can use a Hershey bar or other chocolate bars, chopped chocolate, milk chocolate chips, or any chocolate pieces that you want.
- Mini pie crusts - You can use any pie crusts to hold the chocolate ganache filling. It doesn't have to be a crunchy graham cracker crust.
- Marshmallow cream - You can easily get that gooey marshmallow topping by using marshmallow fluff or cream.

Equipment
This super easy recipe doesn't need a ton of equipment. A medium bowl for mixing, a baking sheet, and a spoon are all that you need for whipping up these miniature pies.
Storage
A great way to enjoy this four-ingredient s'mores pie recipe later is to store leftovers. Just let the top of the gooey marshmallows cool to room temperature, then place them in the fridge. I put them in an airtight container to keep them from absorbing any scents from the fridge.
Common Questions
Absolutely. You've got all the key players of a s'mores dessert. Graham crackers, marshmallows, and chocolate. The temperature of the pie might be chilled compared to the warmth of a campfire s'mores, but all the flavor notes are there!
Yes, have fun! I love adding some fresh fruit, or even little bits of shredded coconut to mine. Anything that pairs well with the flavor of chocolate is going to be just lovely!
You probably could, but I've honestly never tried. They're tiny, and when I make them, they get gobbled up. I just pop the leftovers in the fridge, and they're eaten within 2-3 days, so I've never had to worry about freezing them. The one thing that I would be aware of if you do freeze these pies is that the top marshmallow layer will likely not thaw very well. You could freeze the pies without adding the marshmallow, and then add that once you thaw.

Wondering if I can make these the day before and add marshmallows day of? Will the crust get soggy? I’m so excited to try these!
Taryn says
Yes, the crust should not get soggy. It doesn't get soggy when used for cheesecake.

A fun dessert and super easy! A child could easily do this on their own (other than the broiler). I wish the store bought crusts were a bit thicker. I used dark chocolate, it was very rich and I was hankering for more crust. I was glad to be sharing such a little pie with my youngest sweetie pie.
