This simple and delicious Pear Almondine makes an excellent dessert. Not only is it easy to make, but the almond cake paired with the sweet pears makes this a sweet treat that everyone will love.
I'm a big fan of the taste and texture of the almond cream filling. And I love that you can use all kind of pears for this simple dessert. While it's technically not a tart, I still refer to it as one because it has that same look and design, which I love.
You can serve this in thin slices paired with ice cream, or take this almond tart recipe over the top and drizzle a little bit of apricot glaze or icing sugar on your piece. Adding a few ground almonds (or sliced almonds) on top is another really great way to give this dessert a fun look.

Ingredients
- Pears - I use canned pears to save on prep time but very ripe peeled fresh pears will work as well.
- Almond flour - Since this recipe uses almond flour it is naturally gluten free. It makes an almond filling similar to a macaron.
- Sugar - To add sweetness.
- Eggs - Helps bind the ingredients together while also adding texture.
- Salted butter - Be sure that this is softened before using.
- Almond extract - Adds that warm almond flavoring.

How to Make Pear Almondine
Preheat the oven to 350 degrees. Add parchment paper to a 9-inch round cake pan and grease with butter or nonstick cooking spray.
Step One: Put the pears into the prepared pan.
Step Two: Combine all the other ingredients with a mixer to make the batter. Mix well.
Step Three: Drop dollops around the pears and spread it out evenly in the pan.
Step Four: Put the cake pan in the oven and bake the pear almond tart for 30 minutes or until the top is golden.Â
Top Tip
You can use sliced pears or halved pears for this recipe. I like to use halved because of how it looks. Fresh firm pears will not work because they won't soften during baking. If you use fresh pears they must be very ripe.
Substitutions
- Almond meal - For a more rustic texture swap in almond meal for the almond flour.
- Vanilla extract - This could be used in place of almond extract for a less almondy flavor.Â
Variations
- Toppings - You can top with a bit of apricot jam, powdered sugar, crème fraîche, whipped cream, or even a different fruit glaze for flavor.Â
- Spices - Try adding a warm baking spice such as cinnamon or ginger.
- Tart shell - If you want to use a tart pan and a tart shell, you can. Just be sure to follow the directions on how to bake it before adding the pear mixture. I recommend this keto pie crust which is made with almond flour.

Equipment
You'll need a large bowl, mixer, cake pan, and spatula to make the almond cream mixture. If you're going to make your own almond flour, a food processor will be needed as well.
Storage
Store leftovers of this pear dessert in an airtight container with a lid. It needs to be kept in the fridge and should be eaten within 2 days for the best texture and flavor. I don't recommend freezing this recipe as it will change the texture and outcome.

If you want to add a crust to this sweet treat, you can! You can add an almond flour crust or a premade crust from the store. If it needs to be baked before use, be sure to add those steps to your process. I don't think a graham cracker crust would work.
Some people like to serve this with ground cinnamon sprinkled on top. That is entirely up to you. The fun part about making this simple dessert is that you can add other flavors that you're craving.Â
