How to Make Cookies and Cream Cookie Bars
Preheat the oven to 350 degrees. Add parchment paper to an 8X8 pan.
Step One:
Stir the flour, sugars, cocoa powder, baking soda, and salt together in a large mixing bowl. Add the vanilla extract, egg, and butter. Mix until it is smooth.
Step Two: Stir in the chopped Oreo cookies and half of the chocolate chips. Save the rest of the white chocolate chips to sprinkle on top.
Step Three: Spread ⅔ of the mixed cookie batter into the bottom of the pan.
Step Four: Top that with whole Oreos. Then scatter pieces of the remaining batter between them.
Step Five: Sprinkle the very top with any leftover chocolate chips.
Step Six: Put the pan in the oven and bake for 18-22 minutes, until barely set.
Drizzle with extra melted white chocolate, if desired.

An easy way to get the Oreo crumbles is to use a food processor. Just add and pulse for a short time!
Substitutions
- Semi-sweet chocolate chips - Swap out the white chocolate and use other types of chocolate chips.

- Add peanut butter - I've found that for the best results, you can add a bit of peanut butter to the top of the batter before the adding the whole cookies.

Cookies and Cream Cookie Bars
Ingredients
- ¾ cup sugar
- ¾ cup flour
- ⅓ cup cocoa powder
- 2 tablespoon brown sugar
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ⅓ cup salted butter very soft or melted
- 1 egg
- ½ teaspoon vanilla
- 1 cup chopped oreos
- 16 whole oreos
- ½ cup white chocolate chips
Instructions
- Preheat the oven to 350. Line an 8x8 pan with parchment paper.
