I'm a big fan of making this homemade oatmeal bread because I absolutely love the flavor. All you need are a few simple ingredients, and you'll have a simple, quick bread in no time at all. The hardest part of this recipe is being patient to let the bread cool!
This great recipe can be used for a snack or is a super fun way to take sandwiches to a whole new level. Yeasted bread like this is great for toasting, frying, or slicing and eating when it's still slightly warm from the oven.

Ingredients
- All purpose flour - To make the bread base.
- Warm water - Needed to activate the yeast.
- Rolled oats - Used in the bread and on top.
- Brown sugar - For sweetness.
- Salted butter - To add moisture to the bread.
- Kosher salt - For flavor.
- Yeast - Helps the bread rise as it bakes.
- Egg white - Brushed on top of the loaf to help the oatmeal topping stick.

How to Make this Oat Bread Recipe
Step One: Add the first six ingredients in a large mixing bowl and stir with a whisk.
Step Two: You don't need to knead this bread. You want to just mix until the ingredients are incorporated.
Step Three: Cover the bowl and let the dough rise for 2 hours. It should double in size.
Step Four: You can see here how it's gotten bigger and puffy. Next, put the dough into a prepared loaf pan.Â
Step Five: Let the bread rise a second time for 45 minutes.
Step Six: Brush the top of the bread with egg white. After that, sprinkle with oatmeal.Â
Step Seven: Put the pan in the oven and bake for 30 minutes until golden brown. You can check bread with an internal thermometer. It should be 190-195 degrees F.Â
Step Eight: Let the loaf cool on a wire rack for 1 hour.
Top Tip
Before using, make sure that your active dry yeast is still active; otherwise, the bread dough won't rise. To check the yeast, put a tad bit of yeast into a bowl with warm water and see if it blooms. Check after five minutes have passed. If nothing has changed, your yeast is no longer good.
Substitutions
- Instant oats or quick oats - For the best results use rolled oats on top of the bread, but quick oats could be an option in a pinch.
- Whole wheat flour - I have not tested this recipe with whole wheat flour but it should be ok to sub in. I would try half white flour and half wheat flour.
Variations
- Maple syrup or honey - You can easily add either of these two sweet ingredients to the bread to replace some of the sugar. The flavor of a honey oat bread recipe is really good!
- Pumpkin seeds - Instead of adding whole oats on top, you can add seeds to this easy recipe.

Equipment
You'll want to have a stand mixer with a dough hook attachment, a large mixing bowl, plastic wrap, a cooling rack, and a sharp knife.
Storage
Once this no knead bread recipe has baked, let it cool to room temperature and then store it in a bread container, sealable bag, or other airtight container. You can store it whole, or sliced - up to you.

I like this give this oatmeal bread recipe about three hours to rise before baking it. You will do two rises. One with the dough in a bowl, and then a second shorter rise with it shaped in a loaf pan.

Oat Bread Recipe
Ingredients
- 3.25 cups flour
- 1 â…“ cups warm water
- 1 cup rolled oats
- 2 tablespoon brown sugar
- 2 tablespoon salted butter melted
- 2 teaspoon kosher salt
- ½ tablespoon yeast
Topping
- 2 tbsp rolled oats
- 1 tablespoon egg white
Instructions
- Mix the first 6 ingredients together in a large bowl with a dough whisk or wooden spoon. Do not knead. Just mix until a shaggy dough forms.
- Cover the bowl and let rise for 2 hours or until doubled.
- Transfer to a greased loaf pan.
- Let rise for 45 minutes.
- Brush with egg white. Sprinkle with oatmeal.
- Bake for 30 minutes.
- Let cool on a wire rack for at least 1 hour before slicing.
